French Roast Chicken

Good Sunday Day Dinner. A little work but worth it
- 2 1/2 tbsp. unsalted butter
- 1/3 cup finely diced celery
- 1/3 cup finely diced carrots
- 1/3 cup finely diced onions
- 2 fresh Thyme sprigs
- Parsley stems
- Celery leaves
- 3 1/2 to 4 1/2 pound chicken
- Kosher salt,Table grind black pepper and Paprika
- 6 1/8 inch thick lemon slices
- 8 ounces baby carrots
- 1/2 cup sliced red or white onion
- 1 tbsp. fresh lemon juice
- 3/4 cup chicken stock
Slow-Cooked Split Pea Soup

1.Tie parsley stems and thyme together with kitchen stringand place in a 6 qt slow cooker
- 1/2 cup chopped fresh parsley, plus 8-10 tbs parsley stems
- 4 srigs thyme
- 1 pound green split peas, picked over and rinsed
- 1 large leek, white and light green part only, halved lenghtwise and thinly sliced crosswise
- 2 stalks celery, chopped
- 2 carrots, chopped
- kosher slat and pepper
- 1 smoked turkey leg ( 1-1/2 pounds)
- 1/2 cup frozen peas
Pesto Shrimp Caprese Skewers

1. Thaw shrimp if frozen. Clean shrimp
- 20 medium or large shrimp, peel and devein shrimp leave tails intact
- 1 tbsp olive oil
- 1/4 cup basil pesto plus more for brushing
- 20 4 inch skewers or cut bamboo skewers in half
- 20 bocconcini or 1 inch chunks of fresh mozzarella
- 20 grape tomatoes
- 2 tbsp bottled balsamic vinaigrette salad dressing
- Freshly ground pepper(optional)
Buttermilk Ranch Chicken Cutlets

1.Whisk buttermilk, mayonnaise, mustard, salt, pepper, chives and dill weed
- 1 cup low fat buttermilk
- 1/2 cup light mayonnaise
- 1/2 tsp dried mustard(I use Coleman's)
- 1 tbsp chopped chives
- 1/2 tsp dried dill weed
- 1 tsp Kosher salt
- Freshly ground pepper to taste
- 4 thin cut chicken cutlets
- 2 tbsp olive oil
2007 Pork Chops with Dijon Sauce

Sprinkle pork chops with salt and pepper
- 4 boneless pork loin chops (6 ounces each)
- 1 tsp kosher salt
- 1/4 tsp table grind black pepper
- i tbsp extra virgin olive oil
- 1/3 cup chicken broth ( can use reduced sodium chicken broth)
- 2 tablespoons maille whole grain Dijon mustard
- 1/3 cup half-and-half( regular or fat free)
Cheesy Bacon Chipotle Ranch Dip

1.using the whisk attachment of a stand mixer whip the cream cheese until light and fluffy 2
- 2-8 oz. cream cheese, room temperature
- 1/4 cup chipotle ranch dressing
- 2 cups Colby jack cheese, shredded
- 8 slices of bacon, cooked and crumbled
- 1/2 red bell pepper, diced
- 2 green onions, diced
Shrimp Poached with Beer, Old Bay and Lemon

1. Fill a large pot witn 2 quarts of water
- 1 Bottle of Beer
- 2 tsp kosher salt
- 2 lemons , halved
- 3 bay leaves
- 1 handful of fresh thyme sprigs
- 1 head of garlic, split horizontally
- 1 tbsp. old bay seasoning
- 2 pounds jumbo shrimp with shells on
- Lemon wedges
