Italian Sausage and Lentil Soup

1. Heat 2 tbsp olive oil in a large pot over medium heat
- 3 tbsp olive oil
- 1-1 1/2 pounds Italian sausage( If you prefer you can use hot Italian sausage)
- 1 large onion, chopped
- 1 pound baby carrots, peeled and slice into coins
- 2 large parsnips, peeled and chopped
- 4 celery stalks with leaves, chopped
- 2 1/2 tsps dried italian seasonings
- 1 pound brown lentils
- 4 quarts chicken broth or stock
- 8-16 oz baby spinach or chopped baby kale( I use 16 oz- we love greens)

1.In a large bowl, cream butter, cream cheese and sugar until light and fluffy
- FROSTING:
- 1 cup butter, softened
- 1 package (8 ounces) cream cheese, softened
- 2 cups sugar
- 1 egg
- 1 tsp pure vanilla extract
- 3-1/2 cups all-purpose flour
- 1 tsp baking powder
- Miniature semisweet chocolate chips and green and red M&M's Minis
- 1 cup confectioners' sugar
- 1 to 2 tbsp milk

1.Stir the buttermilk into the cream and heat to lukewarm-not over 85 degrees 2
- 1 tsp commercial buttermilk
- 1 cup whipping cream

- 5 lbs of apples, peeled, cored, and sliced into wedges
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, firmly packed
- 2 tsp cinnamon

- 3/4 cup granulated sugar
- 3/4 cup brown sugar, firmly packed
- 1/2 tsp salt
- 1 cup oatmeal

1.Put the guanciale or Pancetta and oil in a large skillet
- 4 ounces guanciale or pancetta ,cut into 1/4-inch dice
- 2 generous tablespoons extra virgin olive oil
- 3 large eggs, at room temperature
- 10 rounded tablespoons freshly grated pecorino romano, or half pecorino romano and half parmigiano-reggiano
- freshly ground black pepper
- 1 pound bucatini pasta or pasta of your choice

- 1 pound pork tenderloin trimmed

White And Sweet Potato Mash

1.Combine russet potatoes and sweet potatoes in a large pot
- 2 pounds russet potatoes, peeled and cut into cubes
- 1 pound sweet potatoes, peeled and cut into cubes
- 1 tablespoon chicken bouillon granules
- 3/4 cup milk, warmed
- 1/4 cup butter
- 1 1/2 tablespoons brown sugar
- 1 teaspoon salt
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon allspice
- 1/8 teaspoon ground nutmeg
Vietnamese Pork Chops

1.Whisk shallots, brown sugra, fish sauce
- 2 small shallots, finely chopped
- 2/3 cup light brown sugar
- 1/2 cup fish sauce
- 4 tbsp. rice vinegar, unseasoned
- 1/2-1 tsp ground black pepper( I use a tsp)
- 4-6 1" thick bone-in pork chops (for 4 chops,the package should weight about 2 1/2 pounds)
- 1 tbsp vegetable oil or extra virgin olive oil
- limes halves for serving
Greek Vinaigrette

1. In a screw top jar combine all ingredients, cover and shake well
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp dried oregano, crushed or 2 tsps fresh oregano, snipped
- 1/8 tsp salt
- 1/8 tsp ground pepper
