Goat Cheese Salad

Slice the Montrachet(goat cheese) into 12 (1/2-inch-thick) slices
- For the dressing:
- 1 (11-ounce)herbed Montrachet (goat Cheese)
- 2 extra-large egg whites, beaten with 1 tablespoon water
- Fresh white bread crumbs
- 2 tablespoons good cider vinegar
- 2 tablespoons good Champagne vinegar
- Pinch sugar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 extra-large egg yolk
- 1 cup good olive oil
- Enough mixed salad greens for 6 servings
- 1 tbsp each of Olive oil and unsalted butter, for frying
Meat Marinade

1. Mix all ingredients in a ziploc bag- Add meat of your choice
- 1/2 cup packed brown sugar
- 6 tbsp olive oil
- 4 tbsp cider vinegar
- 4 medium cloves garlic, crushed
- 3 tbsp coarse grainy mustard
- 4 tbsp lemon juice
- 1 1/2 tsp kosher salt
Frozen Chocolate Mousse Truffles

1. Whisk egg yolks and sugar in a medium bowl till thick
- 1/2 cup sugar
- 3 large egg yolks
- 3/4 cup heavy cream
- 8 oz. semisweet chocolate, finely chopped
- 2 tbsp. amaretto liqueur
- 1/2 cup toasted almonds, finely chopped
- 2 oz. semisweet chocolate, grated

- 4 boneless pork chops, 1/2" thick
- 1 Tbsp olive oil
- 2 garlic cloves minced
- 1 cup parmesan cheese

Creamy Potato Salad

Classic potato salad recipe that is perfect for picnics, barbecues or any time!
- 3 1/2 pounds potatoes, cut into 1/2" cubes
- 4 eggs
- 1 cup cooked crispy thick cut, bacon, chopped
- 1 cup celery, diced
- 1/2 cup flat leaf parsley, chopped, or 2 tablespoons dried parsley
- 1/2 cup green onion, chopped
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 to 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- Fresh ground pepper, to taste
- 1 to 2 teaspoons ground mustard
Citrus Marinated Pork Chops

1.PREPARE THE PORK Whisk the citrus juice and zest, honey, garlic and onion
- 1 cup fresh orange juice
- 1 teaspoon grated lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon grated lime zest
- 1/4 cup fresh lime juice
- 1/4 cup honey
- 2 garlic cloves, crushed
- 1 small red onion, sliced
- Four 10-ounce bone-in pork loin chops, cut 1 inch thick
- 3 tablespoon extra-virgin olive oil

1. In a bowl, mix cheese and paprika; season to taste with salt and pepper
- 1/2 cup feshly grated Parmesan Cheese

- 1 10oz package Frozen chopped spinanch, thawed
- 1 cup milk
- 1 stick butter
- 1 tsp salt
- 1 cup all purpose flour
- 4 large eggs
- 1 cup shredded swiss cheese or gruyere
- 1/2 cup parmesan cheese
Baked Ziti

1.Preheat the oven to 450° and bring a large pot of salted water to a boil
- 1 pound ziti or penne
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 pound lean ground sirloin
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon smoked paprika
- Salt
- Approximately 3 cups Marinara Sauce
- 1 1/2 cups fresh ricotta (about 12 ounces)
- 1/2 pound packaged mozzarella, shredded
- 1/4 cup freshly grated Parmigiano-Reggiano cheese
