Ingredients

  • 2 lbs pork tenderloin, sliced into medallions
  • 2 eggs or 1 egg and 1/4 cup egg whites
  • 1 cup Italian breadcrumbs
  • 1 tablespoon Italian seasoning
  • 1/2 cup grated parmesan cheese
  • 4 cups Marinara sauce
  • 2 cups shredded mozzarella cheese or shredded mozzarella with provolone cheese
  • 1/4 cup Extra Virgin Olive oil for frying, may need to add more EVO for frying

Preparation

Step 1

1.With a meat mallet, pound pork into thin patties.trimmed off fat
2.In one shallow dish beat eggs or egg and egg whites.In the second shallow bowl, combine breadcrumbs, parmesan cheese and Italian seasonings, salt and pepper to taste.
3.Dip each pork medallion into beaten egg and then into bread crumbs.
4.Fry pork medallions over med hi heat until browned on each side about 3 minutes
5. Drain Pork on paper towels
6.In a 9 X 13 baking dish, put in 1 cup sauce and half the pork, top with half of the cheese. Top with remaining pork, add the remaining sauce to the top of the pork and add the rest of the cheese. half the remaining sauce.
7.Bake covered at 350 for 35 minutes, remove top and bake 10 to 15 minutes until cheese is bubbly.

Serve over pasta.
