Melt butter in heavy large saucepan over medium heat
- 2 tablespoon Butter
- 3 pound onion; sliced
- 1/2 teaspoon Sugar
- 2 tablespoon all-purpose flour
- 2 cups chicken broth
- 2 cups beef broth
- 2 tablespoon dry white wine
- 1-1/2 tablespoon brandy
- 1-1/2 teaspoon dijon mustard
- 4 1/2 inch french bread slices; toasted
- 4 1/8 inch swiss cheese slices
Chestnut Soup

Melt butter in 8 quart pot
- 1/2 pound Butter
- 2 cup onion; chopped
- 1-1/2 cups carrot; chopped
- 2 pound chestnuts
- 4 qt chicken broth
- 1 qt Milk or cream at room temperature
- 1/2 cup flour
- 1/4 teaspoon white pepper
- 1 tablespoon sale (omit if broth is salted)
