- 1 cup water

- 2 garlic cloves, minced
- Vegetable cooking spray
- 1 medium-size red bell pepper chopped
- 1 medium-size yellow bell pepper, shoppe
- 1 yellow onion, chopped
- 1/2 tsp. salt
- 1 1/2 cups fat-free ricotta cheese
- 1 large egg
- 2 cups (8 oz.) shredded part-skim mozzarella cheese, divided
- 1/2 cup freshly grated Parmesan cheese, divided
- 5 cups Basic Marinara Sauce
- 1 (8-oz.) package no-boil lasagna noodles
Apple Coleslaw

whisk together first 5 ingredients
- 1/4 cup apple cider vinegar
- 2 Tbsp. dijon mustard
- 1 Tbsp honey
- 3/4 tsp salt
- 1/4 tsp ground pepper
- 1/4 canola oil
- 2 10 oz pkgs shredded coleslaw mix
- 4 green onions, sliced
- 2 celery ribs, sliced
- 2 honeycrisp, gala, or pink lady apples, chopped
Frittata with Sausage, Mushrooms and Cheddar

In bowl whisk eggs, salt and pepper
- 8 eggs
- Kosher salt and freshly ground pepper
- 6 oz white cheddar cheese cut into 1/4 inch cubes
- 1 tsp plus 2 TBSP olive oil
- 1/2 lb mild sausage (italian or pork)
- 3/4 lb assorted mushrooms, cleaned, trimmed and cut into 1-2" pieces
- 1 bunch swiss chard, about 3/4 lb., stems removed, leaves cut into 1" strips
Baked Squash

Melt oleo and add in stuffing mix
- 1 stick oleo
- 1 package Pepperidge Farms cornbread stuffing
- 1 1/2 lbs. squash, cooked, drained and mashed
- 1 medium onion, chopped
- 1 medium jar pimentos, chopped
- 4 medium carrots, grated
- 1 cup sour cream
- 1 can cream of chicken soup
Cherry-Almond Clafontis (Tart)

Heat oven to 350. Toss the cherries and brandy; set aside and toss periodically
- 3 cups (1 lb.) fresh pitted cherries
- 1 1/2 Tbsp. cherry brandy
- 1/3 cup sliced almonds
- 1 1/2 Tbsp. unsalted butter, softened and cut into pieces
- 1 cup whole milk
- 2/3 cup all-purpose flour, sifted
- 1/4 cup + 2 Tbsp. sugar
- 1/4 cup heavy cream
- 3 large eggs
- 1/8 tsp. salt
- 1/8 tsp. almond extract
Apricot Cake

- 1 cup apricot nectar
- 4 eggs
- 1/4 cup oil
- 3/4 cup oil
- 1 box Duncan Hines Lemon Cake Mix
- 1 box powdered sugar
- 1 8 oz. cream cheese
- 2 Tbsp. butter or nectar

Banana Split Cake

- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, softened
- 1 cup confectioner's sugar
- 1 egg
- 4 bananas, cut in half lengthwise
- 8 ounce can crushed pineapple
- 8 ounce bar cream cheese, softened
- 1/2 cup chopped nuts
Coconut Shrimp Stew

Lightly season the shrimp with creole spice
- 1 1/2 lb extra large shrimp, peeled and devined
- 1 Tbsp virgin olive oil or canola oil
- 1 medium onion diced
- 1 tomatoes diced or 1 can 14 oz diced tomatoes
- 2 large garlic cloves, minced
- 1/2 tsp curry powder
- 14 oz can coconut milk
- 2 cups chicken broth
- 1 tsp creole spice
- 1/2 tsp cayenne pepper
- 2 scallions, thinly sliced (white and green separated)
- 1 red bell pepper diced
- 1/2 cup parsley
- salt and pepper to taste
