In electric wok set on medium-high, pour in oil to depth of 1"; heat until shimmering
- Canola oil for frying
- 2 egg whites
- 1/4 cup cornstarch
- 2 lb. boneless, skinless chicken breasts, cut crosswise into 1/4" strips
- Kosher salt and freshly ground pepper
- 1/2 lb. snow peas, trimmed
- 1 red bell pepper, cut into 1/2" strips, then halved crosswise
- 3/4 cup sesame stir-fry sauce
- 2 tsp. toasted sesame seeds
- Steamed rice for serving
Creamy Hash Brown Bake

- 1/3 cup milk

- 1 1/2 cup flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 10 oz. package mint toll house
- 6 Tbsp. butter, softened
- 1 cup sugar
- 1 1/2 tsp. vanilla
- 2 eggs
- X sugar
Cowboy Cookies

Bake at 350* 12-15 minutes
- Cowboy Cookies
- 1 Cup butter
- 1 Cup sugar
- 1 Cup packed brown sugar
- Cream together and add 2 eggs.
- Add: 1 tsp vanilla, 1 tsp soda, 1/2 tsp salt, 1/2 tsp baking powder, 2 cups flour and 2 Cups oatmeal.
- After all is blended add 2 Cups of chocolate chips & walnuts to taste.
- Drop by large spoon on cookie sheet.

- 1 cup firmly packed light brown sugar
- 1/2 unsalted butter
- 1/4 cup milk (I used 2%)
- 1 cup powdered sugar, sifted
- 1 tsp. vanilla extract
Turkey Thighs Stuffed with Porcini, Sausage, & Artichoke Hearts

MAKE THE STUFFING: Put the porcini in a bowl and cover with boiling water
- FOR THE STUFFING:
- 3/4 OZ. Dried Porcini mushrooms (about 1/2 cup)
- 1 Tbs. olive oil
- 1/4 lb. sweet Italian sausage, casing removed (1 link)
- 1 cup finely chopped yellow onion
- 2 tsp. minced garlic
- 1/2 cup coarsely chopped frozen artichoke hearts (no need to thaw)
- 1/2 tsp. chopped fresh thyme
- 1/2 tsp. chopped fresh rosemary
- 1/2 cup coarse day-old breadcrumbs
- 1/4 cup freshly grated Parmigiano-Reggiano
- Kosher salt and freshly ground black pepper
- 1 large egg. lightly beaten
- FOR THE THIGHS:
- 3 turkey thighs (14 to 18 oz. each), boned

- 3/4 cup 2% reduced-fat cottage cheese
- 4 ounces smoked gouda cheese, shredded (about 1 cup)
- 1 teaspoon minced fresh rosemary
- 3 cloves garlic, thinly sliced
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- Kosher salt
- 1 16-ounce package frozen mixed vegetables (broccoli, cauliflower and carrots), thawed
- 2 tablespoons grated parmesan cheese
- 1 scant teaspoon paprika
- 4 slices multigrain bread
