Cajun Corn and Shrimp Bisque

Peel Onion and puree-set inside
- 1 Large Onion
- 3 16oz cans of kernel corn, drained
- 2 lbs. Peeled Shrimp
- 3 Tbsp. Butter
- 2 (14oz) cans of Chicken Broth
- 1 1/2 cups of Half & Half
- 1 (8oz.) Soft Cream Cheese
- 3 Tbsp. cornstarch (mix with 1/2 cup of cold water)

Instructions: In a medium bowl, whisk together the flour, baking soda, sea salt and cinnamon to combine
- 11 Tablespoons unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 teaspoon cinnamon
- 2 1/2 cups flour
- 1/2 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 3 regular sized Hershey’s bars, broken into pieces
- 1-2 packages graham crackers, broken into squares
Butternut Risotto

Fry the onion gently in 1 tbsp
- 1 small onion, chopped
- olive oil
- 2 sprigs thyme, chopped
- 250 g butternut squash or pumpkin, peeled and diced
- 200 g carnaroli (risotto) rice
- 600 ml vegetable or chicken stock fresh, cube or concentrate, hot
- 2 tbsp. parmesan or Grana Padano, grated
Manicotti

Drop 1 Tbsp. olive oil or vegetable oil into 3 quarts boiling salted water
- MEAT SAUCE:
- 1 box Manicotti
- 15 oz. ricotta cheese
- 2 Tbsp. cottage cheese
- 3/4 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 2 eggs
- 3 #2 cans herb tomato sauce
- 1 lb. mushrooms, fresh sliced
- 1/3 medium diced green pepper
- 1/2 medium diced onion
- 2 Tbsp. butter
- 1 1/2 lbs. ground beef
- Garlic powder to taste
- 1 1/2 Tbsp. parsley
- Sage, very little
- 1 basil leaf
- 1/2 tsp. oregano
Cauliflower-Topped Shepherd's Pie

Make topping: preheat oven to 425 degrees line a large baking sheet with parchment paper
- Topping
- 1 lb cauliflower, cut into small florets
- 1 small celery root, peeled and chopped
- 6 cloves garlic, unpeeled
- 3 Tbsp avocado or EVOO
- 1/4 tsp each sea salt and black pepper
- 3 Tbsp chopped fresh parsley
- 4-6 Tbsp unsweetened almond milk
- Filling
- 3 tbsp avocado or EVOO, divided
- 1 yellow onion, diced
- 2 large carrots, diced
- 2 stalks celery, diced
- 1 tsp sea salt
- 1 tsp dried rosemary
- 3 cloves garlic, minced
- 1 1/2 lb ground beef or lamb
- 1/2 tsp black pepper 2 tbsp cassava flour (I used almond flour)
- 2 tbsp unsalted tomato paste
- 1 cup beef broth

Bring cream cheese to room temperature
- 8 ounces softened cream cheese
- 2 cups Daisy Brand Sour Cream
- 3 ounces cooked bacon, crumbled or bacon bits
- 2 cups shredded Cheddar cheese
- 1 cup chopped green onion
Mini Muffulettas

Pulse pickled vegetables in food processor 8-10 times or until finely chopped
- 2 16 oz jars mixed pickled vegetables
- 3/4 cup pimiento-stuffed spanish olives, chopped
- 2 Tbsp bottled olive oil and vinegar dressing
- 12 small dinner rolls, cut in half
- 6 swiss cheese slices, cut in half
- 12 thin deli ham slices
- 12 genoa salami slices
- 6 provolone cheese slices, cut in half
Swedish Meatballs Halstad

Mix hamburger, onion, crumbs, celery salt, eggs, salt, pepper, and milk
- 1 lb hamburger
- 1/2 cup minced onion
- 1 C dried bread crumbs
- 1/4 Tbsp celery salt
- 2 eggs
- 1 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup milk
- 1/4 cup fat
