Chicken Bake (Tex Mex)

Preheat oven to 350 Combine milk, soup and tomatoes or salsa in a bowl and set aside Sprinkle 1/3 of tortilla strip
- 1 can cream of chicken soup (or cheesy poblano soup, if available)
- 1 10oz can rotel tomatoes, undrained or 1 cup salsa
- 12 small corn tortillas, cut into thin bite sized strips
- 3 cups cubed chicken, cooked
- 1 cup shredded cheddar cheese
- 1/2 cup milk
German Chocolate Macaroons

Place sweetened condensed milk in a double boiler until slightly thickened (about 45 minutes)
- 5 1/12 cups shredded coconut
- 3/4 cups sugar
- 6 Tbsp flour
- 1/2 tsp salt
- 5 egg whites

- 1/4 tsp Salt
- 1 tsp Cinnamon

- 2 {9 inch} deep dish pastry pie shells {I use the pre-made refrigerated ones...no judging, please!}
- 1/2 stick butter {salted}
- 1 {7 ounce} package flaked coconut
- 1 cup pecans {rough chopped...the texture makes this pie what it is}
- 1 {8 ounce} package cream cheese, softened {you can use full fat or 1/3...I wouldn't do fat free}
- 1 {14 ounce} can sweetened condensed milk
- 1 {16 ounce} container whipped topping thawed {I used two 8 ounce ones}
- 1 {14 ounce} jar caramel ice cream topping
