- 1 1/2 cups frozen mixed vegetables, thawed

Heat butter in large skillet; add green onions, nuts and garlic; cook 3-5 minutes until nuts are browned
- 1 Tbsp. butter or margarine
- 1/2 cup green onions, thinly sliced
- 1/3 cup pine nuts or almonds (sliced)

- 3 cups rice cooked in chicken broth
- 1/4 tsp. salt

- 3 cups fresh ricotta cheese or cream cottage cheese

- 1 lb. mozzerella cheese, sliced very thin
Wild Rice Salad
