GRANDMA ZACCONE'S LENDICIA ZUPPA

Cook lentils in salt water for fifteen minutes or as directed on the package
- 3 C dry lentils
- 1 large onion
- Bacon or prosciutto (cut up in small pieces)
- 1 t butter
- 1 t oil
- 16 oz can whole tomatoes or
- 2 medium chopped fresh tomatoes
- 1 C chicken broth
- salt, pepper
BANANA SPLIT DESSERT

Mix together cracker crumbs, sugar and melted butter
- 2 C graham cracker crumbs
- 1 stick butter
- 1/2 C sugar
- bananas
- 1/2 gallon strawberry ice cream
ITALIAN CHOPPED SALAD

1. To prepare dressing, combine garlic, oregano and anchovy fillets in a food processor and pulse until puree
- Dressing:
- 2 garlic cloves
- 3 T dried oregano
- 6 oil-packed anchovy fillets, rinsed and patted dry
- 1/3 C red wine vinegar
- 1/2 C extra-virgin olive oil
- 1/2 C vegetable oil
- 1/2 t salt
- Coarsely ground black pepper
- Salad:
- 1 large head romaine lettuce, sliced crosswise into very thin strips, washed and dried (about 6 cups)
- 1 (16 oz) can garbanzo beans (chickpeas), rinsed and drained
- 1 C pitted whole nicoise olives or sliced jarred kalamata olives
- 1 medium tomato, chopped
- 1 C chopped red onion
- 2 1/2 oz provolone cheese, sliced into 1/8-inch-thin matchsticks (about 1 cup)
- 2 1/2 oz Genoa salami, sliced into 1/8-inch-thin matchsticks (about 1 cup)
- 1 T thinly sliced fresh basil
- 1/4 t salt
- Coarsely ground black pepper
HOMEMADE ICE CREAM

- 6 eggs
- 6 T vanilla
- 1 quart cream
- 1 1/2 to 2 C sugar
- 1 T honey
- milk
PECAN PIE

- 2 unbaked 9" pie shells
- 1 1/2 C pecans, perferably halves
- 4 eggs
- 1 C sugar
- 2 C dark corn syrup
- 2 t vanilla
- 1/4 C (1/2 stick) butter
- 1 pint heavy cream (optional)

- Suggested coatings: powdered sugar, finely chopped pecans, toasted coconut, grated semi-sweet baking chocolate, finely crushed oreos, colored sprinkles
CHOPPED SALAD

1. Cook pasta according to package directions in small saucepan
- Dressing:
- 4 oz uncooked ditalini pasta (1 cup)
- 1 package (10 oz) torn romaine lettuce (8 cups)
- 2 C diced cooked chicken
- 1 medium tomato, seeded and diced
- 1 firm, ripe avocado, peeled and diced
- 1/2 C sliced green onions with tops
- 6 slices bacon, crisply cooked, drained and crumbled
- 1/4 C (1 oz) crumbled blue cheese
- 1/2 C Italian Dressing
- 1/2 C balsamic or white wine vinegar
- 2 pressed garlic cloves
- 1 T sugar
- 1/2 t dried oregano
- 1/4 t onion powder
- 1/4 t salt
- 1 C vegetable or olive oil

- Zest of large lemon
- 4 garlic cloves
- 1 C butter, room temperature
- 2 T Dijon mustard
- Juice of 1 large lemon
- 1 bunch scallions, finely chopped
- 2 T chopped fresh thyme leaves
- 2 T paprika
- 2 t salt
- 1 t freshly ground black pepper
- TURKEY
- One 14 to 16 pound turkey, rinsed, giblets removed, patted dry inside and out
- Kosher salt
- Freshly ground black pepper
- 3 lemons, cut into 1/8 inch-thick slices
- 4 fresh flat-leaf parsley sprigs
- 2 T olive oil
- 2 C turkey stock, chicken stock or water
OREO BALLS

- 8 oz softened cream cheese or whipped cream cheese
- 18 oz package of Oreo cookies, crushed (crush the entire cookie-don't remove the filling)
- 2 C semi-sweet or milk chocolate chips
- 1 T shortening (I use vegetable oil)
