CREAMY PARMESAN PEPPERCORN DRESSING

Mix together and chill
- 1/2 C sour cream
- 1/4 C mayonnaise
- 1/4 C milk
- 3/4 t Dijon mustard
- 1 pressed garlic clove
- 1/2 t coarsely ground black pepper
- 1/2 C (2 oz) fresh grated Parmesan cheese
ORANGE MUFFINS

Preheat oven to 375 degrees
- 3/4 stick butter (softened)
- 1 1/2 C sugar
- 1 egg
- 1/2 C sour cream
- 1/2 t orange extract
- 1/1/4 C flour
- 1/2 t baking soda
- 1/2 t salt
- 1/2 C chopped pecans
- 3 T grated orange peel
- 2 T plus 2 t orange juice
SUGAR COOKIES

1. Beat butter and shortening for 30 seconds
- 1/3 C butter
- 1/3 C shortening
- 3/4 C sugar
- 1 t baking powder
- 1 dash salt
- 1 egg
- 1 t vanilla
- 2 C flour
CHOCOLATE CHIP PUMPKIN MUFFINS

Grease tins, preheat oven to 350 degrees
- 1 2/3 C flour
- 1 C sugar
- 1 T pumpkin pie spice
- 1 t baking soda
- 1/4 t baking powder
- 1/4 t salt
- 2 large eggs
- 1 C canned plain pumpkin
- 1 stick butter, melted
- 1 package mini chocolate chips
SEAFOOD QUICHE

Combine crab, shrimp, cheese, celery and onions
- 3/4 C crabmeat
- 3/4 C shrimp, cooked
- 3/4 C swiss cheese, grated
- 1/4 C celery, cooked
- 1/4 C green onions, sliced
- 1 unbaked 9" pastry shell
- 1/2 C mayonnaise
- 2 T flour
- 1/2 C dry white wine
- 2 eggs, slightly beaten
GINGERSNAPS

Cream sugar and butter. Add egg and molasses
- 2 C sifted flour
- 1/4 t salt
- 2 t soda
- 1 t cinnamon
- 1 t cloves
- 1 t ginger
- 1 C sugar
- 3/4 C butter
- 1 egg
- 1/4 C molasses
FUSILLI WITH ARTICHOKES AND TOMATOES

Cook pasta in boiling water until al dente
- 1 lb fusilli (spiral pasta)
- 8 small artichoke hearts (fresh or 14 oz can)
- 3 T olive oil
- 2-3 cloves garlic, crushed
- 1 small onion diced
- 1 19 oz can tomatoes, with juice (preferably Italian Plum)
- 1 small twig of thyme or 1/4 t dry
- 1/2 C parmesan cheese
- salt, pepper to taste

- 2 lbs assorted heirloom tomatoes, diced
- 1/2 small red onion, thinly sliced
- 2 cloves garlic, finely chopped
- 3 T red-wine vinegar
- 1/4 C plus 2 T extra-virgin olive oil
- 1/2 C packed basil leaves, thinly sliced
- salt and fresh black pepper
- 4 1/2-inch-thick slices ciabatta bread
BROCCOLI-RICE CASSEROLE

Mix all ingredients. Put in round glass casserole
- 2 small packages frozen chopped broccoli, cooked
- 4 C cooked rice (2 pouches Uncle Ben microwave rice)
- 1 can cream of chicken soup
- 1 large jar Cheese Whiz
- Crushed Ritz Crackers (about 1 sleeve)
- 3 T butter, melted
HOLIDAY BEEF ROAST
