CREAMY CHOCOLATE FONDUE

1. Place chocolate morsels and half of the whipped topping in a small bowl
- 3/4 C semi-sweet chocolate morsels
- 1 container (8 oz) frozen whipped topping, thawed
- 1/2 t cinnamon
- 1/2 t vanilla
- Assorted fresh fruit dippers, such as whole strawberries, apple, peach or pear wedges
MONTE CRISTO SANDWICHES

Place one slice turkey, cheese and ham on bread and top with another slice of bread
- 6 slices cooked turkey
- 6 slices swiss cheese
- 6 slices extra-lean ham
- 12 slices bread
- 1 1/2 C flour
- 1 T baking powder
- 1/4 t salt
- 1 1/3 C water
- 1 large egg
- vegetable oil
- powdered sugar for topping
APPLE CIDER WINE

In saucepan combine apple cider, sugar, cinnamon, cloves, and lemon peel
- 3 C apple cider or juice
- 1/4 C sugar
- 3 sticks cinnamon
- 6 whole cloves
- peel of 1/4 lemon cut in stripes
- 3 1/4 C dry white wine
- 2 T lemon juice
RASPBERRY MOUSSE

Dissolve jello in boiling water
- 6 oz raspberry jello
- 2 C water
- 2 cartons raspberry yogurt
CRANBERRY SAUCE

Bring to boil first 6 ingredients
- 6 oz fresh cranberries
- 1 T orange zest
- 1/2 C sugar
- 1 c water
- pinch of salt
- pinch of cinnamon
- 1 T cornstarch
- 1/4 C fresh orange juice
HASH BROWN POTATO CASSEROLE

Soften onions and mix all ingredients together
- 1 large package O'Brien potatoes
- 1/2 C melted butter
- 1 can cream of chicken soup
- 12 oz shredded cheddar cheese
- 1/2 C small onion chopped
- 1 8 oz sour cream
- 1 t salt
- topping: cornflakes and butter
CHICKEN ENCHILADAS

Cook chicken and cut into bite size pieces
- 2 lbs boneless skinless chicken breasts
- 1 C chicken bouillon
- 1 can cream of chicken soup
- 1 can chopped green chilies
- 1 8oz can tomato sauce
- 1 tsp cumin
- sour cream and guacamole
- 6oz each colby-jack and cheddar cheese
- 10 tortillas
YOGURT FRUIT DIP

Combine cream cheese and yogurt until smooth
- 1 package 8-oz low fat cream cheese, softened
- 1 C plain low fat yogurt
- 1 t vanilla extract
- 1 t grated lemon rind
- 12 packets of equal
CHICKEN CASSEROLE

Mix all ingredients. Place mixture in buttered 9" x 13" casserole dish
- 2 C cooked chicken, chopped
- 4 boiled eggs, chopped
- 2 C cooked rice (cook in broth)
- 1 1/2 C chopped celery
- 1 small onion, chopped
- 1 C mayonnaise
- 2 cans cream of mushroom soup
- 1 t salt
- 2 T lemon juice
- buttered bread cubes
ORANGE JULIUS BEVERAGE

Put in blender and blend. You can increase the milk and decrease the water, if desired
- 6 oz can frozen orange juice
- 1 C milk
- 1 C water
- 1/4 C sugar
- 1 t vanilla
- 18 ice cubes
