Vegetable Crispy Fritters

Put potato in a saucepan with boiling water to cover
- 1 4 oz red potato, peeled
- 1 small zucchini
- 1 small carrot, coarsely grated
- 1 scallion, finely chopped
- 1 egg white, lightly beaten
- 1 TB all purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 TB canola oil
APPLE CRUMB DESSERT

Arrange apples in a pie pan or 8 inch square pan
- 4 cups sliced peeled apples
- 1 -2 tsp lemon juice
- Apple pie spice
- 1 cup flour
- 1 cup sugar
- 1 egg
- Pinch of salt
- 1 tsp baking powder
- 4 tsp margarine, melted
Maple Yams

Break up sweet potatoes with fork
- 1 - 40 oz can cut sweet potatoes in light syrup, drained
- 1 TB butter buds sprinkles - dry
- 1/4 cup light maple syrup
Harvest Casserole

Preheat oven to 450. Spray cookie sheet and 2 qt microwavable casserole dish with non-fat cooking spray
- 1 - 30 oz can pumpkin pie mix
- 1 - 21 oz can apple pie filling
- 1/2 tsp ground cinnamon
- 1/2 cup quick cooking oats
- 1/4 c packed dark brown sugar
- 1 egg white
- 3/4 cup reduced fat Bisquick baking mix
Cherry Bread

Beat sugar and eggs together thoroughly
- 1 c sugar
- 2 eggs, beaten
- ¾ c nut meats, chopped
- 1 ½ c flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 - 6 oz glass red maraschino cherries, quartered
- Juice from cherries
Appetizer-Sweet 'n Sour Salsa

Mix together and chill
- Cut up in small pieces:
- ¼ c olive oil
- ½ c cider vinegar
- ½ c sugar
- Combine in saucepan and cool.
- 3 stalks celery
- 1 red onion
- 1 each, red, yellow, green pepper
- 1 can corn
- 1 bunch cilantro
- 1 can black beans
Salad - Cucumber Cole Slaw

COMBINE ALL INGREDIENTS AND MIX WELL 124 calories
- 1 (11.5 OZ) PKG. COUNTRY STYLE FRESH SLAW MIX (ABOUT 5 CUPS)
- 1 CUP THINLY SLICED CUCUMBER
- ½ C REDUCED CALORIE SLAW DRESSING (MARZETTI’S LITE SLAW DRESSING)
Pork & Bean Red Chili

In a medium nonstick saucepan, heat 1 tsp of the oil until hot but not smoking over medium heat
- 2 tsp vegetable oil
- 3/4 pound well trimmed pork tenderloin, but into 3/4 inch chunks
- 1 onion, coarsely chopped
- 1 clove garlic, minced
- 1 TB chili powder
- 1 tsp fennel seeds
- 19 oz can red kidney beans, rinsed and drained
- 15 oz can no salt added tomatoes
- 7 oz jar roasted red peppers, drained and diced
- 4 1/2 oz can chopped milk green chilies, drained
- 1/2 tsp salt
Pancakes Potato

Put eggs, onion, salt, flour, baking powder, and ½ cup of potato cubes into container
- 2 eggs
- ½ small onion
- 1 tsp salt
- 2 TB flour
- ¼ tsp baking powder
- 2 c cubed raw potato
Casserole - Turkey and Wild Rice

Heat oven to 350˚. Mix all ingredients including seasoning packet from rice mix, in ungreased 2 qt casserole
- 2 cups cut up cooked turkey or chicken
- 2 ¼ cups boiling water
- 1/3 c fat free skim milk
- 4 medium green onions, sliced (about ¼ cup)
- 1 can (10 ¾ oz) cream of mushroom soup
- 1 pkg (6 oz) original flavor long grain and wild rice mix
