Carrot Cake

Carrot cake is a perennial favorite, but is often loaded with vegetable oil and laden with a cream cheese frosting
- 2 cups firmly packed finely grated carrots (3 large)
- Juice of 1 large orange
- 2 tsp vanilla extract
- 1/4 c light olive oil
- 1 cup honey, liquefied in microwave (30 seconds)
- 1/2 cup crushed or chopped pineapple, drained
- 1 cup unbleached white flour
- 1 1/2 cups whole wheat pastry flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ground allspice
- 3/4 cups walnuts, chopped
Chicken Breasts Mexican Style

Put chicken and taco seasoning in plastic bag; shake and coat well
- 1 pkg taco seasoning (Taco Bell is best)
- 4 (4 oz) chicken breasts
- 1 cup salsa
- ¼ non-fat sour cream
Salad - Ramen Noodle Salad

Blend all together and add sauce and blend
- Sauce:
- 1 pkg coleslaw mix
- 1 pkg Ramen noodles – oriental flavor – (crunch up into small pieces)
- 1 pkg sunflower seeds
- 1 bundle green onions (sliced thin)
- 1 pkg sliced almonds
- ½ cup oil
- Ramen Noodle flavor packet out of noodle package
- 2 T red wine vinegar
- 2 T sugar
Butternut Squash

Preheat oven to 400 degrees
- Butternut squash
- 2 TB olive oil
- pinch of salt
- dash of pepper
- Optional: 1 TB smoked paprika
- grated Parmesan cheese
Herb Garlic Beans & Vegetables w/ Grilled Chicken

Heat oil in medium saute pan
- 2 TB olive oil
- 1 small onion, chopped
- 1 small celery stalk, chopped
- 1 small carrot, chopped
- 1 clove garlic, chopped
- 1 (16 oz) can Bush's red kidney beans, rinsed and drained
- 1 (16 oz) can Bush's black beans, rinsed and drained
- 1 (15 oz) can Bush's pinto beans, rinsed and drained
- 1/2 cup chopped canned whole tomatoes
- 1 tsp fresh thyme
- 2 tsp white wine
- salt and pepper to taste
Frosting-Fluffy

Pour milk into medium bowl
- 1 cup cold milk
- 1 pkg (4 serving size) Jello instant pudding and pie filling, any flavor
- 1/4 cup confectioners' sugar
- 1 tub (8 oz) cool whip topping, thawed
Beefy Baked Beans

Cook ground round in large nonstick skillet over medium heat until browned, stirring until it crumbles
- 1 pound ground round
- 1 ½ c chopped onion (about 1 large)
- 1 c chopped green bell pepper (about 1 medium)
- 1 garlic clove, minced
- 2 – 16 oz cans navy beans, drained
- 1 – 15 ¼ oz can lima beans, drained
- 2 – 14 ½ oz cans no salt added diced tomatoes, undrained
- 1 c barbecue sauce
- ¼ c firmly packed brown sugar
- 2 TB salt free barbecue spice (such as the Spice Hunter)
