Cookies- Applesauce Oatmeal

- 3 cups quick cooking oats
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- 1 cup unsweetened applesauce
- 1 cup sugar
- 1 tsp vanilla extract
- 2/3 cup dark raisins

Combine oats, flour, baking soda, and nutmeg and stir to mix well. Add the applesauce, sugar, and vanilla extract, and stir to mix well. Stir in the raisins.
Coat cookie sheets with nonstick cooking spray. Roll the dough into 1 inch balls, and place the balls 1 1/2 inches apart on the cookie sheets. If the dough is too sticky to handle, place it in the freezer for a few minutes. Using the bottom of a glass dipped in sugar, flatten the cookies to 1/4 inch thickness.
Bake at 275 for about 22 minutes, or until lightly browned. Transfer the cookies to a wire rack and cool completely. Serve immediately or transfer to an airtight container and arrange in single layers separated by sheets of waxed paper.
