Waldorf Pasta Salad with Creamy Citrus Dressing

  • 1 cup rotini pasta
  • 1 apple, cored and cut into 1/2 inch chunks
  • 1/2 cup seedless grapes, halved
  • 1 small carrot, chopped
  • 1 celery stalk, finely chopped
  • 2 TB raisins
  • 2 TB chopped fresh parsley
  • 1/4 cup fat free mayo
  • 1 TB fresh lemon juice
  • 1 TB orange juice
  • 2 tsp honey
  • 1/2 tsp salt
  • 2 TB toasted chopped walnuts

Step 1

Cook pasta according to package directions. Drain; rinse under cold running water and drain again. Transfer pasta to serving bowl. Add apple, grapes, carrot, celery, raisins, and parsley; toss to combine.

Whisk together the mayo, lemon juice, orange juice, honey, and salt in a small bowl until well blended. Add the dressing to the pasta mixture; toss gently to coat. Sprinkle with the walnuts and serve.
