Creamy Custard Filling

Filling used for Boston Cream Pie or anything else that can use custard filling
- 1/3 c sugar
- 2 T flour
- salt
- 1 egg slightly beaten
- 3/4 c Scalded milk
- 1 t vanilla
- 1/2 c whipped cream
Western Stir-Fry Rice

This is a "western" version of fried rice that's very easy to customize to your own tastes
- 1 c rice
- 2 c water
- salt
- Frozen Vegetables (my favorite is snow peas, baby corn and red bell or frozen peas)
- 1-2 T Canola oil
- salt
- pepper
- 1 t bouquet garni or thyme
- 1 T worchestire sauce
Honey Gold Bread

- 3 cups Basic Sourdough Starter
- 2 c milk
- 2 T butter
- 1/4 c Honey
- 1 package active dry yeast
- 2 c whole wheat flour
- 1/4 c Wheat Germ
- 2 T sugar
- 2 t salt
- 2 t baking soda
- 4 c white four
Turkey Pot Pie

This recipe is great for Turkey leftovers after Thanksgiving
- Turkey Stock
- 1 Turkey Carcass
- 2 large onion
- 3 large Carrots
- 3 Stalks Celery
- Water to cover
- Crust
- 2 sticks butter
- 2 1/2 c Flour
- Ice Water
- Filling
- 1 Stick butter
- 1 large sweet onion
- 2 carrots
- 5 c Turkey stock (recipe above or substitute chicken stock)
- 1 c flour
- 4 c left over turkey meat chopped (white & dark)
- salt
- pepper
- concentrated chicken stock
Rhubarb Custard Pie

Beat Eggs, add sugar, flour, salt, melted butter and mix well
- 1 9 in Pie Shell (un cooked)
- 2 eggs
- 1 c sugar
- 2 T flour
- 1/2 t salt
- 2 T Melted Butter
- 1 c milk
- 2 C Rhubarb cut into 1/2 " pieces
Genny's Lemon Squares

These are the best lemon bars I've ever eaten
- Crust:
- 1 c butter (real, don't cheat)
- 2/3 c sugar
- 2 1/4 c flour
- Filling:
- 5 eggs
- 1 3/4 c sugar
- 1/3 c flour
- 1/2 t baking powder
- 2/3-3/4 c lemon juice (fresh - approx 5 medium lemons)
Yule Log Cake

We started making this as a traditional yule log
- 2 c Whipping Cream
- 1 Vanilla Bean
- 2 T Powdered Sugar (to taste)
- 1 T Vanilla Extract
- 8 Eggs Separated & Room temperature
- 1 1/3 c sugar (Fine baking)
- 6 oz Semi Sweet Chocolate (Good Quality)
- Powdered Sugar
Stuffed Acorn Squash

Wonderful fall stuffed squash
- 2-3 Large Acorn or other winter squash
- Apple Sausage Stuffing -
- 1 lb bulk sausage
- 1 onion (diced)
- 1 apple (diced)
- 2 c bread cubes
- 3/4 c chopped nuts
- 3/4 c golden raisins (optional)
- 1 T sour cream or plain yogurt
- 1/4 t dried thyme
- 1/4 t basil
- 1/4 t oregano
- Sausage Stuffing (option 2)
- 1 lb bulk sausage
- 4 stalks celery finely diced
- 1 medium onion finely diced
- 2 carrots shredded
- 1/4 c water
- 2 c bread crumbs
Seafood Newburg

- 2 c (about 3/4 lb) coarsely chopped cooked lobster, crab or shrimp
- 2 T butter melted
- 1 T flour
- 1 T rice Flour
- 1/4 t salt
- 1/4 t paprika
- dash cayenne
- dash nutmeg
- 2 c half and half
- 1/4 c dry sherry (optional)
- Toasted english muffins or hot cooked rice
- chopped parsley
Meatball Cheese Tortellini Soup

- Meatballs
- 1 large garlic clove
- 2 oz Parmesan Cheese cut into pieces (or more)
- 12 oz beef or (4 oz beef, port and veal each) cut into 1 inch cubes
- 1 1/2 slices white bread (or sourdough is good)
- 1 small onion
- 1/3 c milk
