Creamy Chocolate Frosting

- 3 squares unsweetened Choc melted
- 1/2 c melted butter
- 1 egg
- 1 t vanilla
- 3 1/2 c powdered sugar
- 1/4 c milk
Gorgonzola Spinach Artichoke Dip

This recipe is awesome!
- 2 (10-ounce) boxes chopped frozen spinach
- 1 box frozen artichoke hearts
- 3 tablespoons butter
- 4 cloves garlic, chopped
- 3 tablespoons all-purpose flour
- 1 cup chicken stock
- 1 cup milk
- Salt and freshly ground black pepper
- Pinch ground nutmeg, or to taste
- 1 cup Gorgonzola crumbles
- 1 1/2 cups shredded (a little larger than grated, available in tubs) Asiago or Parmigiano-Reggiano
- Thick sesame bread sticks, for dipping
- Celery hearts, trimmed for dipping
- Pita crisps with Parmesan and herbs (recommended: Stacy's)
Gwennie's Cheesecake

An unusual cheesecake recipe with the sour cream topping baked on
- Graham Cracker Crust
- 16 graham crackers
- 1 T flour
- 1/4 lb butter melted
- 1/4 c Sugar
- Filling
- 4 packages Cream Cheese (based on other recipes 2 cups equal 2 modern packages)
- 1/2 c sugar
- 2 eggs
- 3/4 t vanilla
- 1/2 t lemon
- Topping
- 1 1/2 c Hampton Sour Cream
- 3/4 c sugar
- 1 t vanilla
Kahlua

- 2 oz instant coffee
- 3 1/2 c- 4 c sugar
- 2 c water
- 1 vanilla bean
- 1/5 bottle bourbon
Manicotti (Knudsen cookbook)

Cook manicotti 4 at a time in boiling, salted water, 5-6 minutes or until just done but still firm
- 1 (5 oz.) package manicotti
- 8 oz. cream cheese at room temp.
- 1 cup cottage cheese
- 1/2 pound (or more) Mozzarella cheese, grated, separated
- 2 eggs
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 1/2 cups meatless spaghetti sauce (we like Classico 4 cheese)
- 3 oz. Canned mushrooms, if desired
Denise's Too Thick Minestrone Soup

This minestrone soup is thick and filling
- 1 1/2 large onion
- 3 cl garlic
- 1 T Olive Oil
- 1 lb Top Sirloin (cubed 1")
- 2 Qts water (or more)
- 1 1/2 c Beans (15 bean mix)
- 1 cube chicken broth
- 1 cube Beef bouillon
- 3 stalks Celery (chopped)
- 3 carrots chopped
- 2 potatoes cubed small
- 1 large can tomatoes
- 1 T Salt
- 1 t pepper
- 1 t basil
- 1 T parsley
- 3 T italian Seasoning
- 2 small sliced zuchini
- 1/4 bag frozen peas
- 6 italian sausage cut into 1/2" pieces
- 1 1/2 c pasta (usually rotini but pick your fav)
- Grated Parmesan for topping

- 1 (14.5 ounce) can chickpeas (garbanzo beans), drained
- 2 rounded tablespoons tahini sesame paste, found in both dairy and dry specialty foods sections
- extra-virgin olive oil (Rachel says a drizzle, I found it needed much more)
- 1/2 teaspoon crushed pepper flakes
- 1 teaspoon (1/3 palm full) ground cumin
- 1 teaspoon (1/3 palm full) ground coriander
- 1 clove garlic, crushed
- Coarse salt
- 1/2 lemon, juiced
- Pita breads, grilled and cut into wedges for dipping
White Chocolate Macadamia Nut Cookies

Preheat oven to 350 degrees F (175 degrees C)
- 1 c butter softened
- 3/4 c packed light brown sugar
- 1/2 c white sugar
- 2 eggs
- 1 t vanilla extract
- 2 1/2 c all purpose flour
- 1 t baking soda
- 1/2 t salt (omit if butter is salted)
- 1 c coarsely chopped macadamia nuts
- 1 c white chocolate chips
Scallop Saute

- 2 lbs scallops
- flour
- oil for sauteing
- 1 1/2 stick butter
- 2 bunches green onion, chopped
- 2 lbs mushrooms, sliced
- 2 T minced shallots
- 2 T garlic, minced
- 1 T salt
- 2 t freshly ground white pepper
- 1/2 lemon (juice) more or less
- 2 c dry white wine
