PHO Noodle Soup

This is our families adapted version of Vietnamese Noodle soup
- Broth
- 3 large beef bones w some meat (shank)
- 1 T whole Coriander
- 6 Cloves
- 1 Stick Cinnamon
- 5 Star Anise
- 1 T Fennel Seed
- 1 Whole Cardamon Pod
- 1/4 C fish sauce
- 4 " piece of fresh Ginger root
- 1 " yellow rock sugar
- Soup
- thinly sliced beef
- thin egg noodles
- salt
- pepper
- meatballs (asian or regular)
- prawns (optional)
- baby boch choi

- 1 lb semi sweet chocolate
- 1 c walnuts
- 1/2 c golden raisins
- 1 2/3 c mini marshmallows
Cheese Fondue

This family cheese fondue was a common party or Christmas Eve favorite
- 1/2 lb Gruyere cheese
- 1/2 lb Emmenthaler cheese
- 1 T Lemon Juice
- 3 T Kirsch
- 2 C dry white wine
- 1 cl garlic
- dash nutmeg
- dash paprika
- 3 T flour
- Loaf sourdough french break
Hot Spinach Artichoke Dip

The is an adaptation of two recipes, one from Alton Brown and one from Emeril Lagasse
- 1 package frozen spinach
- 2 can artichoke hearts (drained)
- 8 oz cream cheese
- 2/3 c sour cream
- 1/3 c mayonnaise
- 1 c grated Parmesan
- 1 c Asiago Cheese grated
- 1/4 t salt
- 1 heaping t minced garlic
chicken (baked w/ breadcrumbs)

This recipe is incredibly simple but very good! Was always my kids favorite
- 12 drumsticks
- 1 c italian seasoned bread crumbs (I like progresso)
- 1 t salt
- 1 t onion powder
- 1 t garlic powder
- 1/4 t sage (can also use herbs d'Province or Ital Seasoning)
- Mayonaisse
Butternut Squash Fall Soup

Place in Stock Pot on medium heat: Broth (or water and bullion) Potatoes Butternut squash Carrots Melt “bu...
- 1 Butternut Squash, cubed
- 1 Small sweet onion, chopped
- 2 new potatoes (low glycemic index)
- ½ sweet red pepper, chopped
- ½ sweet yellow pepper, chopped
- 2 Carrots, peeled, chopped
- Parsley: fresh, a handful, chopped
- 2 32-ounce boxes of organic, free range chicken broth
- (can substitute 2 cubes bullion and water)
- 1 t salt
- ½ t ground pepper
- Red pepper (Cayenne) to taste
- 2 T smart balance butter substitute (or like product)
Crab Corn Fritter

1. To prepare fritters, weigh or lightly spoon flour into a dry measuring cup; level with a knife
- Fritters:
- 4.5 ounces all-purpose flour (about 1 cup)
- 1/4 cup cornmeal
- 3 tablespoons finely chopped fresh chives
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1/2 cup buttermilk
- 2 large eggs
- 3/4 cup frozen corn kernels, thawed
- 1 (8-ounce) container lump crabmeat, shell pieces removed
- 1/4 cup canola oil, divided
- Guacamole:
- 2 tablespoons finely chopped seeded plum tomato
- 1 tablespoon organic canola mayonnaise
- 2 teaspoons minced red onion
- 2 teaspoons fresh lemon juice
- 1/8 teaspoon salt
- 1 avocado, peeled and seeded
Fresh Pesto

Blend in Cuisinart or Blender until smooth serve over pasta
- 2 C Fresh Basil
- 1/2 C Olive Oil
- 2 T Pine Nuts
- 2 Clove Garlic
- 1 t salt
- 3T Butter
- 1/2 C Parmesan
Carrot Cake

this Carrot Cake is super moist and yummy
- Frosting:
- 1 1/2 c Whole Wheat Flour
- 1/2 c white flour
- 2 t cinnamon
- 2 t soda
- 1/2 t salt
- 3 eggs
- 3/4 c oil
- 3/4 c buttermilk
- 2 c sugar (1 c white & 3/4 c brown)
- 2 c grated carrots
- 1/2 c nuts
- 1/2 c sesame seeds
- 3 1/2 oz Coconut
- 1/2 c buttermilk
- 3 T cream cheese
- 1 c sugar
- 1 T corn Syrup
- 1/2 stick butter softened

- 3 lb salmon cut in half lenghtwise (debone) Fish needs to be fresh
- 1 c coarse salt
- Dill (or other fresh herb of choice - optional)
