cabbage Rolls

Adapted from Emeril Lagasse's Cabbage roll recipe
- Sauce
- 2 teaspoons butter
- 1 cup chopped yellow onions
- 1 teaspoon minced garlic
- 1 (28-ounce) can chopped tomatoes and their juices
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar
- 1 head cabbage, cored and scalded in hot water until soft and easy to separate
- Stuffing
- 2 teaspoons unsalted butter
- 1 cup chopped yellow onions
- 2 teaspoons chopped garlic
- 1/2 pound ground beef
- 1/2 pound ground italian Sausage
- 1 cup cooked long-grain white rice
- 2 teaspoons Emeril's Essence, recipe follows
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 egg
Eggnog (Family Version)

Great Family Eggnog - This recipe has been adapted from the Four Roses Bourbon recipe
- 6 Egg Whites Beaten Stiff
- 1/4 c sugar
- 1 Pint Heavy Cream beaten Stiff
- 1/4 c Sugar
- 6 Egg Yolks
- 1/2 c sugar
- 1 Pint Milk
- Sugar
- Vanilla
- Cognac or Whiskey or Bourbon
Roasted Cauliflower with Caramelized Onion Gratin

Adapted from a couple different recipes for Cauliflower gratin, but decided to roast cauliflower and add caramelize
- 1 head cauliflower, broken up into florets
- 2 tablespoons olive oil
- Salt and pepper
- 1 1/2 large sweet yellow onions
- 1 1/2 tablespoons garlic, minced
- 1 tablespoon olive oil
- 1/4 cup butter
- 3/4 cup flour
- 3/4 cup milk
- 1 1/2 cups cheese, grated (white cheddar and parmesan is good mix use something that's "sharp" Asiago or aged cheddar).
- Pepper

Cheesy Potato Pancakes

This Cheesy Potato Pancake is everything you want with Potatoes, crusty, cheesy and satisfying
- 1 large russet potato scrubbed clean
- 1/3 sweet yellow onion, chopped fine
- 3/4 cups sharp cheddar or mix of sharp cheeses, shredded
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 beaten egg
- Olive oil or butter, for frying
- Fried egg (optional)
Spiced Crab Apples

My first attempt at old-time spiced crab apples
- 4 1/2 cups white sugar
- 3 cups water
- 2 1/2 cups white vinegar
- 1 (4 inch) cinnamon sticks
- 1 teaspoon whole allspice
- 1 teaspoon whole clove
- 1 T Mace
- 1 T Red food Coloring
- 8 cups washed, drained, and pricked once with a fork crabapples
Lemon Meringue Pie (Mama's)

My Grandmother made the best lemon meringue pie
- Pie Dough, enough for 1 layer (pate brise or graham cracker crust)
- Meringue
- 4 Egg Whites
- 1/2 c sugar
- Filling
- 2 beaten egg yolks
- 1 C + 2 T sugar
- 4 T Lemon Juice
- 1 T Butter
- 1 1/2 c Boiling water
- Zest of one lemon rind
- 4 T Cornstarch
Apricot Sauce for Poultry

Originally developed for microwave, but equally good (or better) in oven
- 1 Can Apricot Nectar
- Onion to taste (1/4 small, chopped?)or onion powder
- Honey -- at a guess, about 1/4 cup
- Corn Starch -- 1 T
Super Simple Pumpkin Tiramisu

Beat 1 1/2 cups chilled whipping cream and 3/4 cups sugar until peaks form
- 1 1/2 cups chilled whipping cream
- 3/4 cups sugar
- 8 oz container marscapone cheese,
- one 15 oz can of pure pumpkin
- 3/4 tsp pumpkin pie spice (or 1/4 tsp each cinnamon, cloves and nutmeg);
- 6 oz package of halved lady fingers
- 4 TBSP rum.
- 2 oz of crushed amaretti cookies.
Alton Brown Tempura

Combine the dry items together and the wet items together
- Tempura batter:
- 1 egg, beaten
- 5 oz unbleached cake flour
- 5 oz white rice flower
- 1/2 cup vodka
- 1 1/2 cups seltzer water
- 1 1/2 quart vegetable oil for frying
- Soy ginger sauce:
- 2 tablespoons freshly grated ginger
- 2 tablespoons chopped green onions
- 2 cloves garlic, chopped
- 2 tablespoons sugar
- 1 teaspoon sesame oil
- 1/4 cup rice wine vinegar
- 1/2 cup soy sauce
