  • 2 Louisiana Hot Sausages (andouille works)
  • 2 T butter or 1T butter/1T Olive Oil
  • 1 large Onion thinly slivered
  • 1 stalk celery thinly sliced
  • 1 medium bell pepper, seeded and cut into thin strips
  • 1 small dried hot red chili, crushed (optional)
  • 1/4 t dried thyme
  • 1/2 t salt
  • 1/4 c uncooked rice
  • 1 can (1 lb) tomatoes
  • 1 c tomato juice
  • 2 c homemade chicken broth
  • 1/4 pound cooked, peeled small - medium prawns

  • 2 c canned pitted black olives
  • 1/4 c butter
  • 1/2 c finely chopped celery

  • 3/4 pound bacon
  • 2 c chopped onions
  • 1 c chopped celery
  • 1 c diced carrot
  • 1 1/2 t salt

  • 8 c chicken stock
  • 1 1/2 lb new potatoes quartered
  • 1 c fresh sweet corn (or frozen white corn)
  • 1 t crab boil
  • 1 c half & half (optional)
  • 1/2 c fresh parsley, finely chopped
  • 5 whole lobsters, cooked and split in half or 1 1/2 lb dungeoness crab meat
  • 1/4 t tabasco hot sauce (optional)
  • 1 t worcestershire sauce
