Pear-Cinnamon Streusel Squares

1. Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 1 1/4 cups quick-cooking rolled oats
- 3/4 cup packed brown sugar
- 2 teaspoons ground cinnamon
- 1 cup butter
- 2 eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour

- 2 cups peeled and chopped pears or apples

- 2 cups powdered sugar

Coconut Watermelon Margarita

Pour 5 oz. of coconut rum into a blender
- 5 oz. Bacardi Coconut Rum
- 1 – 10oz. Frozen Bacardi Mixers Non-alcoholic Margarita concentrate

Smoky Corn Chowder with Shrimp

Heat a medium-sized pot over medium heat
- 2 slices bacon, cut into 1/2-inch pieces
- 1/2 pound shrimp, peeled and deveined
- 1/2 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 Tbs. smoked paprika
- 1 pinch crushed red pepper
- 3 ears fresh corn, kernels removed
- 2 cups chicken stock
- 1/2 cup half and half (or cream)
- coarse salt and freshly ground pepper
- basil slivers for garnish (optional)
Grilled or Pan Roasted Pork Tenderloin in Honey Lime Chipotle Marinade

Trim tenderloins of fat and silver skin as much as possible
- 2 lbs pork tenderloin (2 small tenderloins)
- 1 cup lime juice, about 8 juicy limes
- zest from 2 limes
- 1/2 cup honey
- 1 tbsp kosher salt
- 1 tsp garlic powder
- 2 chipotle chiles in adobo sauce, chopped
- 1 tbsp adobo sauce (from canned chilies)
- peanut oil, or other high temperature oil
- cilantro
Dried Cranberry Shortbread

Heat oven to 325 degrees
- 1 cup (2 sticks) unsalted butter, room temperature
- 3/4 cup sifted confectioners' sugar
- 1 teaspoon pure vanilla extract
- 2 cups sifted all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup finely chopped dried cranberries or cherries
Bacon Cheeseburger Soup

In a heavy pot with tall sides (a small to medium sized stock pot works great) over medium heat, fry the bacon
- for the soup:
- 8 slices thick-cut bacon
- 2 lbs. lean ground beef
- 2 T. Lipton Onion Soup Mix
- 4 T. butter
- 1 large onion, chopped
- 16 oz. button mushrooms, sliced
- 4 cloves garlic, minced
- 6 c. reduced sodium beef broth (chicken broth is also fine, but we prefer the beef)
- 2 14.5-oz. cans diced fire roasted tomatoes (undrained)
- 2 10.75-oz. cans cheddar cheese soup
- 2 c. half and half
- 1 T. Worcestershire sauce
- 1/4 c. ketchup
- 1 T. prepared mustard
- 1 tsp. cumin
- 1 tsp. medium hot chili powder (We love the one from Penzeys!)
- 1/2 tsp. garlic powder
- 1 tsp. Lawrys seasoned salt
- 1 tsp. black pepper
- 1/2 c. light sour cream
- optional (but highly recommended!) garnishes:
- dill pickle chips
- shredded cheddar cheese
- for the toasted garlic buns:
- 1 dozen whole wheat dinner rolls, sliced
- butter
- Penzeys Sandwich Sprinkle (or your favorite garlic seasoning salt)
Salted Toffee-Chocolate Graham Cracker Squares

Preheat oven to 350 degrees F
- 13 graham crackers
- 1 8-ounce bag toffee bits
- 1 1/2 cups coarsely chopped almonds
- 1/2 cup sugar
- 1 cup (2 sticks) butter
- 3/4 cup (4 ounces) bittersweet chocolate, chopped, or chocolate chips
- 3/4 teaspoon coarse salt
Greek Salad Dressing

Place all ingredients in a jar with lid, and shake well to mix
- 1 tsp. chili stone ground mustard
- 1/4 cup white wine vinegar
- 1/2 cup olive oil
- 1/2 tsp. dried oregano
- 1/2 tsp. fine sea salt
- 1/2 tsp. freshly ground pepper
- 1/4 tsp. dried basil
