Chocolate Mint Mousse Pie

Sprinkle gelatin over cold water in small cup; let stand 2 minutes to soften
- 1 teaspoon unflavored gelatin
- 1 tablespoon cold water
- 2 tablespoons boiling water
- 1/2 cup sugar
- 1/3 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
- 1 cup (1/2 pt.)cold whipping cream
- 1 teaspoon vanilla extract
- 1 baked 8-inch or 9-inch pie crust , cooled

- 1/4 cup cooked real bacon pieces or 4 slices bacon, crisply cooked, crumbled
- 1/2 cup finely shredded Cheddar cheese (2 oz)
- 1/4 cup chopped green onions (4 medium)
Cheesy Beef and Rice

In a large saucepan, saute rice and garlic in butter until golden brown
- 1 cup uncooked long grain rice
- 1 garlic clove, minced
- 2 tablespoons butter
- 3 cups water
- 2 medium carrots, shredded
- 2 teaspoons beef bouillon granules
- 1 teaspoon dried parsley flakes
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried minced onion
- 1 pound ground beef, cooked and drained
- 1/2 cup shredded cheddar cheese
Tex Mex Beef and Rice Casserole

HEAT oven to 350ºF. BROWN meat in large nonstick skillet; drain
- 1 lb. extra-lean ground beef
- 1 can (14 oz.) fire-roasted diced tomatoes, undrained
- 1 can (11 oz.) corn with red and green bell peppers, undrained
- 1/2 cup chopped onions
- 1 tub (10 oz. ) PHILADELPHIA Santa Fe Blend Cooking Creme, divided
- 3 cups cooked long-grain white rice
- 1 cup KRAFT Shredded Colby & Monterey Jack Cheeses, divided
- 1 cup crushed tortilla chips
- 3 Tbsp. chopped fresh cilantro
Citrus Almond Champagne Cake

It can be hard to find a cake recipe that is both simple and delicious
- 1 box white cake mix
- 1 cup (8 ounce) Orange Almond Champagne (or Sparkling Wine) The brand I got is made by Wilson Creek, called “Orange Mimosa”.
- 3 eggs
- Citrus champagne frosting
- 1/4 cup orange juice
- 1/4 cup champagne (can omit and sub in more orange juice)
- 1 pound powdered sugar (I made mine with about 3/4 pound.)
Peanut Butter And Nutella Cupcakes

Preheat oven to 350°F. Line 8×8 inch or 7×11 inch pan with baking parchment paper
- 1/2 cup butter, melted
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/4 teaspoon baking powder
- Pinch of salt
- 4 tbsp (1/4 cup) peanut butter (chunky, smooth, whatever you have on hand)
- 4 tbsp (1/4 cup) Nutella
Mandarin Orange Cranberry Pecan Stuffing

Preheat oven at 350 degrees
- 1 large can mandarin oranges drain out half the juice out
- 1/2 cup dried cranberries
- 1/2 cup pecans
- 2 tablespoons chopped onions
- 1 tablespoon chopped celery
- 2 cloves minced garlic
- 2 tablespoons butter
- 1 teaspoon poultry seasoning
- 6 cups herb flavored croutons
- 2 cups chicken broth (and more if it dries out)
Cracker Barrel Hash Brown Casserole

- 1 package (2 pound) frozen Hash Browns
- 8 ounces sour cream
- 1 can cream of chicken soup
- 1 stick butter
- 1/2 cup onions, chopped
- 2 cups cheddar cheese, grated
Spaghetti Squash Au Gratin

Cheesy and creamy, spaghetti squash casserole is terrific as a main dish
- 1 medium spaghetti squash
- 2 tablespoons butter
- 1 small yellow onion, cut in half and very thinly sliced
- 1/4 teaspoon red pepper flakes, or more if you like it spicy
- 1 teaspoon fresh thyme
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
Mom's Mashed Potatoes

1. Place potatoes and garlic into a large saucepan and cover with water
- 4-5 medium red potatoes, cubed
- 3 cloves garlic, quartered
- 1/2 cup butter
- Salt and pepper, to taste
- 2 Tablespoons milk
- Additional butter, as needed (2-4 Tbsp)
- 2 oz. cream cheese
