- FROSTING:
- 1 1/4 cup butter, softened, divided
- 2 cups chopped pecans
- 2 cups sugar
- 4 eggs
- 2 tsp vanilla extract
- 3 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 pkgs (8 oz each) cream cheese, softened
- 1 cup (2 sticks) butter, softened
- 1 pkg (2 lbs) confectioners’ sugar
- 2 tsp vanilla extract
- 2 to 3 Tb milk, as necessary

- FOR THE CUSTARD:
- 1 smallish baguette or crusty loaf of bread, cut into 1-inch slices (about 1 lb loaf)
- 3 large eggs
- 1/2 cup milk
- 1/3 cup heavy cream
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon ground cinnamon
- pinch of sea salt

Pina Colada Macaroons

Pina Colada Macaroons are especially special since they have delicious pineapple chunks
- 2 2/3 cup full fat shredded unsweetened coconut (one 8-ounce package) or 1 cup of coconut butter
- 1 cup reduced-fat shredded unsweetened coconut
- 1/2 cup crushed pineapple in juice, very well drained
- 1 cup old-fashioned rolled oats
- 3/4 cup honey
- 1 tablespoons pure vanilla bean paste
- 1/2 teaspoon coconut extract
- 1/2 teaspoon Kosher salt
Chicken Enchilada Soup

In a large Dutch oven or stockpot, add chicken stock and heat over medium heat
- 3 cups chicken stock
- 2 skinless, chicken breasts
- 2 tsp ground cumin
- 2 tsp ancho chili powder
- 1/2 tsp cayenne pepper
- 1 28 oz can diced tomatoes
- 4-6 jalapeno peppers, minced
- 1 green bell pepper, diced
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 15 oz can black beans, rinsed and drained
- 2 cups frozen corn
- 1/2 cup tomato paste
- 8 oz cotija cheese, crumbled
- 8 oz pepper jack cheese, divided
- 1 cup cilantro, chopped
