Pineapple Layer Cake

Prepare cake batter according to package directions
- 1 package (18-1/4 ounces) yellow cake mix
- 1 can (11 ounces) mandarin oranges, drained
- 1 can (20 ounces) unsweetened crushed pineapple, drained
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1 package (12 ounces) frozen whipped topping, thawed
Mango Nut Bread Recipe

In a large bowl, combine the first five ingredients
- 2 cups all-purpose flour
- 1-1/2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups chopped mangoes
- 1/2 cup chopped dates
- 1/2 cup chopped walnuts or macadamia nuts
Pumpkin Cupcakes

Preheat oven to 350°. Line a cupcake tin with cupcake wrappers
- For the Pumpkin Cream Cheese Frosting:
- 18.25 oz Betty Crocker Golden Vanilla Super Moist Cake Mix*
- 2 tsp pumpkin pie spice
- 1 cup canned 100% pure pumpkin
- 1 cup water
- 8 oz Philadelphia 1/3 fat cream cheese (do not use fat free)
- 1/2 cup pureed pumpkin (canned is fine)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 5 tbsp packed brown sugar
White Sangria

In a large pitcher, mix the white wine and orange liqueur
- 1 bottle good quality fruity white wine, like pinot grigio or sauvignon blanc
- 1/4 cup orange liqueur
- 1 medium peaches, washed, pitted and sliced (about 1 1/2 cups)
- 1 cup strawberries, washed, hulled and sliced
- 1 orange, thinly sliced
- 1 cup green grapes, halved
- 1 cup bing cherries, pitted and halved
- Ice
- fresh mint sprigs for garnish (optional)
- simple syrup (see below; you’ll need water and sugar)
Picnic Sangria

Combine all ingredients in a large pitcher
- 1 (750-milliliter) bottle white wine
- 1 cup peach schnapps
- 1/2 cup frozen lemonade concentrate, thawed
- 2 nectarines, sliced
- 1 cup green or red grapes, whole or sliced
Glazed Caramelized Roasted Banana Bread Drop Doughnuts

Preheat oven to 400 degrees F
- Glaze:
- 3 large ripe bananas, cut into 1/2-inch slices
- 2 tablespoons cold butter, cubed
- 3 tablespoons light brown sugar
- Vegetable oil, for frying
- 1 3/4 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup heavy cream
- 1/4 cup sour cream
- 1 egg
- 1 cup cinnamon chips (recommended: Hershey's)
- 1/3 cup milk
- 1 tablespoon unsalted butter
- 1/2 teaspoon vanilla extract
- 2 cups confectioners' sugar
Cherry Chocolate Chip Cupcakes

Preheat oven to 350 degrees F
- 1 1/2 cups all purpose flour
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, room temperature
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 cup buttermilk
- 1 cup finely chopped fresh pitted cherries – I used frozen cherries
- 1/2 to 3/4 cup mini chocolate chips (optional)
Raspberry Coconut Cake

Prepare cake batter according to package directions; fold in 2/3 cup coconut
- 1 package white cake mix (regular size)
- 3 cups flaked coconut, divided
- 6 ounces white baking chocolate, chopped
- 1/4 cup heavy whipping cream
- 3/4 cup seedless raspberry jam
- 1 cup butter, softened
- 1 cup confectioners' sugar
Roasted Potato Salad

-Preheat the oven to 400 degrees and line a baking sheet with foil
- Warm, Bacon Vinaigrette:
- 2 (1 1/2 pound) bags yellow baby potatoes, either halved or quartered depending on size
- 4 tablespoons olive oil, divided use, plus a drizzle for the baking sheet
- 1 teapsoon sea salt, plus a pinch, divided use
- 1/4 teaspoon cracked black pepper
- 1 large red onion, quartered and sliced thinly
- 1 tablespoon sugar
- 6 strips apple smoked bacon, uncured, chopped into small pieces
- 2 tablespoons flat-leaf parsley, chopped
- 3 tablespoons apple cider vinegar
- 2 teaspoons sugar
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 3 tablespoons reserved, warm bacon drippings
- 1 tablespoon olive oil
Angel Lush With Pineapple

- 1 can (20 oz.) DOLE Crushed Pineapple in Juice, undrained
- 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
- 1 cup thawed COOL WHIP Whipped Topping
- 1 pkg. (10 oz.) round angel food cake, cut into 3 layers
- 10 small fresh strawberries
