Breakfast Mac & Cheese

Imagine a heaping breakfast plate with cheesy eggs, spicy sausage, and biscuits
- 1 pound pasta (I used cavatelli shaped pasta)
- 1 pound breakfast sausage, removed from casings and crumbled
- 1 large onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 jalapeño pepper, seeds discarded, diced
- 1/2 tablespoon garlic salt
- 1 garlic clove, minced
- 4 tablespoons butter
- 6 tablespoons flour
- 4 cups whole milk
- 5 cups Colby Jack cheese
- 1 cups Pepper Jack cheese
- Salt, to taste
- Pepper, to taste
- 4 eggs
- 6 breakfast biscuits, toasted and crumbled (homemade or refrigerated)
Summer Squash and Corn Chowder

1. Cook bacon in a large Dutch oven over medium-high heat until crisp
- 2 slices applewood-smoked bacon
- 3/4 cup sliced green onions, divided
- 1/4 cup chopped celery
- 1 pound yellow summer squash, chopped
- 1 pound frozen white and yellow baby corn kernels, thawed and divided
- 2 1/4 cups 1% low-fat milk, divided
- 1 teaspoon chopped fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon salt
- 1/4 cup (1 ounce) shredded extra-sharp cheddar cheese
Herb Lemon Zest Butter

Put herbs on a work surface
- 1/4 cup mixed herbs, such as flat-leaf parlsey, chervil, tarragon, and chives, chopped
- 1 stick (1/2 cup) unsalted butter, softened
- 1 teaspoon finely grated lemon zest
Beef, Cheddar and Potato Pie

Preheat the oven to 375 degrees
- 2 pounds ground beef
- 2 carrots, cut into 1/4-inch cubes
- 1 large onion, cut into 1/4-inch cubes
- 2 stalks celery, cut into 1/4-inch cubes
- 1 large clove garlic, finely chopped
- 1 large baking potato, peeled and cut into 1/4-inch cubes
- 1/2 cup dark beer
- 8 ounces sharp cheddar cheese, shredded
- Salt and pepper
- 2 sheet frozen puff pastry, thawed but cold
- 1 large egg yolk, beaten with 1 tablespoon water
Potato-Topped Meat Loaf Casserole

Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray
- 1 lb extra-lean (at least 90%) ground beef
- 3 tablespoons Progresso® plain bread crumbs
- 3 tablespoons steak sauce
- 1 tablespoon instant minced onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 egg
- 2 2/3 cups water
- 1/4 cup butter or margarine
- 1 teaspoon salt
- 2/3 cup milk
- 2 cups Betty Crocker® Potato Buds® mashed potatoes (dry)
- 1 1/2 cups Green Giant® Valley Fresh Steamers™ frozen chopped broccoli, thawed
- 1/2 cup shredded sharp Cheddar cheese (2 oz)
Snickerdoodle Blondies

1.) Preheat oven to 350 degrees F
- 2 2/3 cups AP flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp salt
- 2 cups brown sugar
- 1 cup softened butter
- 2 eggs, at room temperature
- 1 tbsp vanilla extract
- 2 tbsp white sugar
- 2 tsp cinnamon
- a pinch turbinado sugar
Delicious Fantasy Fudge

Combine sugar, margarine and milk in a saucepan
- 3 cups of sugar
- 3/4 cups of margarine
- 2/3 cups of evaporated milk
- 12 oz. package chocolate chips
- 7 oz. jar of marshmallow cream
- 1 tsp. of vanilla
Buffalo Chicken Cheese Ball

If you like buffalo chicken dip you'll love these Buffalo Chicken Cheese Balls
- 1 cup chicken, cooked and shredded
- 1/4 cup blue cheese, crumbled
- 1/4 cup mozzarella cheese, shredded
- 1/2 jalapeno pepper, finely diced
- 2-3 tablespoons hot sauce (I like Frank’s)
- 1 package (80ounce) cream cheese, softened
- 1 cup cheddar and gouda cheeses, shredded, for rolling in
Strawberry Cupcake Puppy Chow

1. Melt Almond Bark according to directions on package, adding in vegetable shortening before melting
- 5 Cups Chex Cereal
- 10 oz Almond Bark (vanilla flavored)
- 1 1/2 Cups Strawberry Cake Mix (dry)
- 1/2 Cup Powdered Sugar
- 1-2 tsp. vegetable shortening
- 2-3 Tbs. Sprinkles
Micro-way-cool Bacon and Green Beans

- 6 slices microwave ready-crisp bacon
