Sour Cream and Bacon Crockpot Chicken

Place the bacon in a large skillet and cook over medium-low heat until some of the fat is rendered
- 8 bacon slices
- 8 boneless, skinless chicken breasts
- 2 (10 oz) cans roasted garlic cream of mushroom soup
- 1 cup sour cream
- 1/2 cup flour (all purpose or gluten free blend)
- Salt and pepper to taste
Caramelized Pineapple Cupcakes

Preheat the oven to 350
- 4 cups fresh pineapple, chopped into 1/2 inch chunks
- 1 cup brown sugar, packed
- 2 teaspoons grated fresh ginger
- 3 tablespoons butter
- 1 teaspoon vanilla extract

- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 stick unsalted butter, softened
- 1/2 cup white sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 1 egg white
- 1/2 cup coconut milk
- 2 sticks butter, softened
- 3 cups powdered sugar
- Reserved pineapple caramel, cooled completely
- 1 teaspoon vanilla
Cinnamon Swirl Bread

Melt butter with milk
- 1 cup milk
- 6 Tbl butter
- 2-1/2 tsp active dry yeast
- 2 whole eggs
- 1/3 cup sugar
- 3-1/2 cups all-purpose flour
- 1 teaspoon salt
- 1/3 cup sugar
- 1 Tbl cinnamon
- Egg and milk, mixed together, for brushing
- Softened butter, for smearing and greasing
Tropical Pineapple Coconut Bars

Heat oven to 350°F. Lightly grease 13 x 9-inch pan
- BASE
- 1 package (1-lb 2.25-oz) pudding-included yellow cake mix
- 1 1/2 cups quick-cooking rolled oats
- 1/2 cup margarine or butter, softened
- 1 egg
- FILLING
- 1/2 cup all-purpose flour
- 1 (14-ounce) can sweetened condensed milk (not evaporated)
- 1 (8-ounce) can crushed pineapple, well drained, reserving liquid
- 1/8 teaspoon nutmeg
- TOPPING
- 1 cup chopped macadamia nuts
- 1 cup coconut
- 1 cup white chocolate chips, vanilla
- GLAZE
- 1 cup powdered sugar
- 4to 6 teaspoons reserved pineapple juice
Lemon Custard Cream Pie

In a medium saucepan over medium heat combine cornstarch, Splenda Granular, and milk
- Filling:
- 1/4 cup cornstarch
- 1 1/4 cup Splenda Granular
- 1 cup 2 % milk
- 3 egg yolks, beaten
- 3 tablespoons cold butter, cut into chunks
- 1 tablespoon freshly grated lemon zest
- 1/3 cup lemon juice
- 1/2 teaspoon vanilla
- 1 cup plain Greek yogurt (regular yogurt is too thin)
- 2/3 cup heavy whipping cream, whipped (whip after measuring) OR 1 1/2 cups Cool Whip
- Crust:
- One pkg Murray’s sugar free Shortbread cookies, crushed into fine crumbs (1 1/2 cups)
- 1/4 cup almond flour
- 1 teaspoon freshly grated lemon zest
- 1/4 cup butter, melted

Bacon Cheeseburger Potato Pie

Heat oven to 375°F. In medium bowl, mix ground beef, bread crumbs, onion, ketchup, mustard and salt
- 1 1/2 lb extra-lean (at least 90%) ground beef
- 1/2 cup Progresso® plain bread crumbs
- 1/4 cup finely chopped onion
- 1/4 cup ketchup
- 2 teaspoons yellow mustard
- 1/2 teaspoon salt
- 1 1/4 cups water
- 3 tablespoons butter or margarine
- 1/4 teaspoon garlic salt
- 3/4 cup milk
- 2 cups mashed potato flakes
- 1 cup shredded Cheddar cheese (4 oz)
- 1 medium tomato, chopped
- 3 slices precooked bacon, crumbled
- 2 green onions, sliced, if desired

- 1/4 c butter, softened
- 2 1/4 c powdered sugar
- 1 T reserved cherry juice
- 1/2 t vanilla extract
- 1/4 t almond extract
- 1 (12-oz) bag semi-sweet chocolate chips
- 1/4 cake paraffin wax, shredded OR 2 T vegetable shortening
Creme Brulee French Toast

- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 2 tablespoons corn syrup
- 6 (1-inch thick) slices French bread
- 5 eggs
- 1 1/2 cups half-and-half cream
- 1 teaspoon vanilla extract
- 1 teaspoon brandy-based orange liqueur (such as Grand Marnier®)
- 1/4 teaspoon salt
