Garlic Cheese Biscuits

Preheat the oven to 400 degrees F
- Garlic Butter:
- 1 1/4 cups biscuit mix
- 1/2 cup grated sharp Cheddar
- 1/2 cup water
- 1/2 stick unsalted butter, melted
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon dried parsley flakes
Chocolate Peanut Butter Pie

Make the chocolate crust: Preheat the oven to 375 degrees
- Chocolate Crust
- 4 ounces semisweet chocolate, chopped (I use Ghirardelli)
- 4 tablespoons (1/2 stick) unsalted butter, cut into tablespoons
- 8 ounces Nabisco chocolate wafer cookies (about 32 cookies from a 9-ounce package), finely ground in a food processor (2 cups)
- Peanut Butter Filling
- 8 ounces cream cheese, softened (1 small tub)
- 1 cup peanut butter (I use Skippy Natural)
- 1 cup sugar
- 2 teaspoons pure vanilla extract
- 1 cup well-chilled heavy cream
- Chocolate Topping with Peanuts
- 4 ounces semisweet chocolate, chopped (such as Ghirardelli)
- 1/2 cup heavy cream
- 1/4 cup salted roasted peanuts, chopped

- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of celery soup, undiluted
- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 tablespoon chili powder
- 12 corn tortillas (6 inches), cut into 1-inch strips
- 2 cups (8 ounces) shredded reduced-fat cheddar cheese, divided

Summer Strawberry Soup

In a blender, combine the yogurt, orange juice, strawberries and sugar in batches; cover and process until blended
- 2 cups vanilla yogurt
- 1/2 cup orange juice
- 2 pounds fresh strawberries, halved (8 cups)
- 1/2 cup sugar
- Additional vanilla yogurt and fresh mint leaves, optional
Queso Blanco Dip

Toss all ingredients into a large microwave-safe bowl
- 1 1/4 lb block White American Cheese (Land O'Lakes brand preferred), cut into 1-inch cubes
- 1/4 cup diced green chiles
- 2 pickled jalapenos, chopped

- 2/3 cup whole milk

Broccoli, Bacon and Cheddar Chowder

In a large pot, saute bacon over medium heat until browned and crispy, about 5 minutes
- 8 slices bacon, chopped
- 2 tbsp unsalted butter
- 1 onion, finely chopped (opt: use 1 teaspoon Onion powder instead)
- 1 to 2 teaspoons sugar (opt: I add a bit of sugar to all my soups!)
- 2 tbsp all-purpose flour
- 3 cups milk (opt: use 2 cups of milk + 1 cup heavy cream instead)
- 2 cups chicken broth
- 1/2 tsp salt
- Pinch cayenne pepper (opt: 1/2 tsp. red pepper flakes)
- 12 oz red-skinned potatoes (about 3 medium cut into 1/2 inch dice)
- 2 cups shredded Cheddar cheese, tossed with 1 tbsp all-purpose flour
- 1/2 cup shredded or shaved Parmesan cheese (opt)
- 2 packages (each 10 oz/300 g) frozen chopped broccoli, thawed and drained
- optional : If you prefer, you can substitute 4 to 5 cups chopped cooked fresh broccoli instead of frozen
