Bacon, Egg and Cheese Ring

1. Heat oven to 375 degrees
- 1 can of crescent rolls
- 5 large eggs; scrambled
- 1 cup of shredded Colby and Monterrey jack cheese
- 8 slices of cooked bacon (I bought the pre-cooked stuff)
- 1 teaspoon of season salt

1. Place the heavy cream and chopped orange peel in a small saucepan over medium heat
- To Finish:
- 2 tablespoons + 2 teaspoons heavy cream
- 1/2 teaspoon chopped fresh orange peel

- 4 teaspoons champagne or sparkling wine

- 6 ounces (1 cup) chopped white chocolate

Raspberry Tiramisu

1. In the bowl of an electric mixer fitted with the paddle attachment, beat together mascarpone and sugar
- 1 8 ounce package mascarpone cheese
- 1/2 cup sugar
- 1 1/2 cups heavy cream
- 1/2 teaspoon pure vanilla extract
- 40 or so store bought lady fingers
- 1 8 ounce jar seedless raspberry jam
- juice of 2 lemons
- raspberries, a lot, as many as you can get
Pasta Milano

In a large skillet over high heat, brown the diced bacon
- 3 slices bacon, diced
- 2 chicken breasts, cut into bite sized pieces
- 4 cloves roasted garlic, mashed
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup white mushrooms, sliced
- 1 cup chicken broth, divided
- 1 cup heavy cream (or half & half for a lower fat version)
- salt and pepper to taste
- 8 ounces dry farfalle (bowtie) pasta
- water for boiling pasta
- 1 cup shredded Parmesan cheese
- 2 tablespoons chopped fresh basil

- 1 1 1 t balsamic vinegar

Cheesy Potato Soup With Crispy Prosciutto

Preheat oven to 400°F. Place 6-8 slices of prosciutto on a lightly greased or Silpat lined sheet pan
- 6-8 slices of prosciutto
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2-3 carrots, diced
- 1 lb. (approximately) red potatoes (10-12 small or 4-6 large), peeled and cubed
- 1 quart of chicken stock or broth
- 3 tablespoons of butter
- 3 tablespoons of flour
- 2 cups of milk
- 2 cups of grated cheddar cheese
- salt and pepper to taste
Crockpot Cilantro Lime Chicken

Put all ingredients in order in slow cooker
- One 24-ounce jar medium or mild salsa
- Juice from one lime
- 1/4 cup fresh cilantro, chopped
- One 1.25-oz. package taco seasoning
- 2 jalapeno peppers, finely chopped (optional)
- 4-6 boneless chicken breast halves (completely defrosted)
Pineapple Sin Cake

First, preheat the oven to 350 and grease a 6” round cake pan
- For the cake:
- 1/4 cup solid coconut oil
- 2 tablespoons unsalted butter, softened
- 1/2 cup sugar
- 1 large egg
- 1/8 teaspoon rum (or almond) extract
- 3/4 cup flour
- 1/8 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup buttermilk
- For the topping & frosting:
- 8 oz. can of crushed pineapple (packed in 100% pineapple juice)
- 1/4 cup brown sugar
- 1/3 cup sweetened flaked coconut
- 1/2 cup heavy whipping cream
- 1 teaspoon dark rum
- 2 tablespoons powdered sugar
