Middle Eastern Orange Cake

Wash 2 of the oranges and place in a saucepan with water to cover
- 5 large oranges
- 6 eggs, beaten
- 2 1/4 cups ground almonds
- 1 1/4 cups caster sugar
- 1 teaspoon baking powder
- 1 cup plain low-fat yogurt
Dirt Cake

Whisk the milk and pudding together in a large bowl until smooth
- 3 1/2 cups whole milk
- 2 small packages instant French vanilla pudding
- 1 stick butter, softened to room temperature
- 1 (8-ounce) package cream cheese, softened to room temperature
- 1 cup powdered sugar
- 1 (16-ounce) container non-dairy whipped topping
- 2 packages chocolate sandwich cookies
- Milk chocolate candy rocks
- A tube of green frosting
- Assorted gummy worms
Cookies and Cream Kiss Cookies

1. Preheat oven to 350 degrees F
- 2 cups all purpose flour
- 1 tablespoon cornstarch
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 cup coarsely chopped Oreo cookies
- 24 cookies ‘n cream kisses
Amaretto Crème Brûlée

Heat oven to 350°F. Place six 6-oz
- 6 egg yolks
- 1/2 cup sugar
- 1 pint (2 cups) whipping cream
- 1/4 cup amaretto
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- 2 tablespoons sugar
- 1/4 cup sliced almonds, toasted
Butternut Squash & Wild Mushroom Rotini

In a large skillet, heat the olive oil over medium heat and add the onion; sauté for a few minutes until softened
- 1 T olive oil
- 1 small onion, diced
- 1.25 lb Sweet Italian turkey sausage, removed from casings
- 6 oz wild mushrooms {the package I used had cremini, shiitaki & yellow oyster}
- 2 C butternut squash, cut into about 1/2" cubes
- 1 1/2 C water
- 24 oz jar pasta sauce {I used Prego brand}
- 1 T blend of herb mix {I used 1 t each dried oregano and basil, 1 t fresh rosemary}
- 1 lb whole wheat rotini noodles
- 1/2 C shredded Parmesan cheese
- Salt and pepper to taste

- 1 clove garlic, finely chopped
- 1/4 cup chopped fresh cilantro

- 1 tablespoon plus 2 3/4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 1/2 sticks (10 ounces) unsalted butter, at room temperature
- 1 1/4 cups plus 1/3 cup buttermilk
- 5 whole eggs
- 2 egg yolks
- 2 1/2 teaspoons vanilla extract
- Buttercream: (halve this recipe if you will be covering the cake with fondant)
- 6 large egg whites
- 1 1/2 cups sugar
- 1 teaspoon pure vanilla extract
- 1 1/4 pounds (5 sticks) unsalted butter, softened
- 2 tablespoons warm water
