Korean Beef

Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil
- 1 pound lean ground beef
- 1/4 - 1/2 cup brown sugar (I like it sweet so I usually do closer to 1/2 cup)
- 1/4 cup soy sauce (I use low-sodium)
- 1 Tablespoon sesame oil
- 3 cloves garlic, minced
- 1/2 teaspoon fresh ginger, minced
- 1/2 - 1 teaspoon crushed red peppers (to desired spiciness)
- salt and pepper
- 1 bunch green onions, diced (don't skip this!)
Sticky Coconut Chicken

Marinade chicken in coconut milk, ginger, pepper and red pepper flakes for about four hours
- Glaze:
- 3 boneless, skinless chicken breasts or thighs
- 1/2 cup canned coconut milk
- 3/4 Tbsp. minced fresh ginger
- 1/2 tsp. fresh ground pepper
- 1/2 tsp. red pepper flakes
- 3/4 cup rice vinegar
- 1/2 cup sugar
- 3 Tbsp. soy sauce
- 1 tsp. red pepper flakes
Individual Raspberry Cobblers

Preheat oven to 350 degrees
- 2 cups Self-rising Flour (You Must Use Self-rising)
- 2 cups Sugar
- 2 cups Milk
- 2 sticks Butter, Melted
- 1 teaspoon Vanilla Extract
- 2 cups Fresh Raspberries
- Extra Sugar For Sprinkling
Fresh Fruit Bruschetta

Preheat oven to 400. Slice baguette and lay on a wire rack on top of a baking sheet
- 1 whole wheat baguette
- 1 cup mascarpone cheese
- 1 tablespoon honey
- 1/3 cup chopped strawberries
- 1/4 cup blueberries
- 1/4 cup chopped mango
- 1 kiwi, chopped
Baby Blue Salad

Toss together first 5 ingredients in a large bowl
- 1 (5-ounce) bag mixed spring salad greens
- 2 ounces crumbled blue cheese
- 1 orange, peeled and sectioned
- 1/2 pint fresh strawberries, quartered
- 1/2 cup Sweet-and-Spicy Pecans
- Balsamic Vinaigrette
Chili Cream Cheese Dip

Warm ingredients until blended in a pot on the stove or in the microwave for 1-2 minutes
- 1 (8 oz) block of softened cream cheese
- 1 (15 oz) can of high quality chili ( I like Hormel or Dennison )

- 1/4 cup whole maraschino cherries
- 1/4 cup nuts suggestions, almonds, pistachios, walnuts, pecans, macadamia, hazelnuts
- 1/3 cup shortening
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour
- 1 1/4 teaspoons of baking powder
- 1/4 teaspoon salt

Bacon, Cheddar, Chicken & Rice Bake

This chicken and rice casserole is an easy and quick weeknight meal
- 4 tablespoons butter
- 1 medium onion, chopped (about 1 cup)
- 4 garlic cloves, chopped
- 1 teaspoon seasoning salt
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- 4 tablespoons all-purpose flour
- 3 1/2 cups chicken stock
- 3 1/2 cups milk
- 1 1/2 cups uncooked long-grain rice
- 3 cups cooked chicken, cubed (I use Rotisserie)
- 1 1/2 cups cheddar cheese, shredded
- 1/2 cup cooked crumbled bacon
