Biscuit Taco Casserole

Heat oven to 400°F. Lightly grease 13x9-inch (3-quart) baking dish
- 2 jars (8 oz each) Old El Paso® Taco Sauce
- 1 (12-oz) can Pillsbury® Grands!® Jr. Golden Layers® refrigerated buttermilk biscuits
- 4 to 6 oz. (1 to 1 1/2 cups) shredded sharp Cheddar cheese
- 4 to 6 oz. (1 to 1 1/2 cups) shredded mozzarella cheese
- 1 (2.25-oz.) can sliced ripe olives, drained
- 1/2 lb. lean ground beef
- 1/4 cup chopped red bell pepper, if desired
- 1/4 cup chopped green bell pepper, if desired
- 1 (4-oz.) can Green Giant® Mushroom Pieces and Stems, drained, if desired
Black Forest Cake Cupcakes

To make the cupcakes, preheat the oven to 350˚ F
- For the cupcakes
- 1/2 cup unsweetened Dutch-process cocoa powder
- 1/2 cup hot water
- 2 cups all-purpose flour
- 3/4 tsp. baking soda
- 3/4 tsp. baking powder
- 3/4 tsp. coarse salt
- 1 cup (2 sticks) unsalted butter
- 1 1/2 cups sugar
- 3 large eggs, at room temperature
- 2 1/2 tsp. vanilla extract
- 2/3 cup sour cream, at room temperature
- For the cherry filling
- 16 oz. frozen cherries, thawed*
- 1/3 cup sugar
- 3 tbsp. cornstarch
- 1 tsp. lemon juice
- 1 tbsp. kirsch (optional)
- For the frosting
- 1 1/2 cups heavy cream, chilled
- 6 tbsp. confectioners’ sugar, sifted
- 1 tsp. vanilla extract
- For garnish
- Fresh (or maraschino) cherries, with stems
- Chocolate shavings
Hot Slaw

In a large skillet, cook bacon until crisp
- 6 slices bacon
- 1 large onion, chopped
- 1 medium green bell pepper, chopped
- 1 large head green cabbage, shredded
- 4 tablespoons chili powder
- Kosher salt
- 1 (10-ounce) can diced tomatoes and green chiles (recommended: Ro-Tel)
Whole Wheat English Muffins

Combine the warm water, honey, yeast and butter in a bowl and let stand for about 5 minutes until foamy
- 1/2 cup warm water (115 degrees)
- 1 tablespoon honey
- 1 (5/16 oz) package Hodgson Mill (especially for whole grains) active dry yeast
- 1 teaspoon unsalted butter, melted
- 2 cups whole wheat pastry flour
- 3/4 cup whole wheat flour unbleached all-purpose flour
- 1/4 cup old fashioned oats
- 1/4 cup wheat germ
- 1 tablespoon flaxseeds
- 1/2 cup low-fat buttermilk (or 1/2 cup water & 1 1/2 tablespoons Organic Valley Buttermilk blend powder)
- 1/4 cup cornmeal
Garlic Roast Chicken with Rosemary and Lemon

Preheat oven to 450 degrees F
- 2 1/2 pounds boneless, skinless chicken breasts, cut into large chunks
- 6 cloves garlic, crushed
- 3 tablespoons fresh rosemary leaves stripped from stems
- 3 tablespoons extra-virgin olive oil, eyeball it
- 1 lemon, zested and juiced
- 1 tablespoon grill seasoning blend (recommended: Montreal Seasoning) or, coarse salt and black pepper
- 1/2 cup dry white wine or chicken broth
Parmesan Meatloaf

Preheat the oven to 350 degrees
- 1 lb ground turkey
- 1 lb ground beef
- 2 eggs
- 1/4 cup gluten free breadcrumbs
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1-2 cloves garlic, finely minced
- 1 small onion, grated
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup marinara pasta sauce (homemade here, minus the meat)
- 1/2 cup shredded Italian cheese blend
- minced parsley for garnish
Chocolate-Mint Thumbprints

1 Heat oven to 350°F. Line cookie sheets with cooking parchment paper
- 1 cup butter, softened
- 1 cup powdered sugar
- 1 1/2 teaspoons peppermint extract
- 2 egg yolks
- 16 drops green food color
- 2 1/4 cups Gold Medal® all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup dark chocolate chips
- 3 tablespoons whipping cream
- 3 tablespoons butter
- 18 thin rectangular crème de menthe chocolate candies, unwrapped, cut in half diagonally
Cherry Mash Bars

Combine sugar, butter or margarine, salt and half and half in saucepan
- 1 cup sugar
- 2 tablespoons butter (I used butter) or 2 tablespoons margarine (I used butter)
- 1/4 teaspoon salt
- 1/3 cup half-and-half (I used 1/2 and 1/2 mixed with whole milk) or 1/3 cup undiluted evaporated milk (I used 1/2 and 1/2 mixed with whole milk)
- 1 cup miniature marshmallow
- 1 cup cherry chips
- 1 cup chocolate chips (I used Ghirardelli Bittersweet Chocolate about 3
- 1/2 ounces) or 4 ounces bittersweet chocolate (I used Ghirardelli Bittersweet Chocolate about 3 1/2 ounces)
