Decadent Chocolate Cheesecake

For crust: Preheat the oven to 350°F
- Crust:
- 9-ounce package of chocolate cookies (such as chocolate wafers, graham crackers or teddy grahams)
- 1 tablespoon sugar
- 6 tablespoons butter, melted
- Filling:
- 10 ounces semisweet or bittersweet chocolate, chopped
- 4 (8-ounce) packages cream cheese, room temperature
- 1 1/4 cups plus 2 tablespoons sugar
- 1/4 cup unsweetened cocoa powder
- 4 large eggs
- Topping:
- 3/4 cup whipping cream
- 6 ounces semisweet or bittersweet chocolate, chopped
- 1 tablespoon sugar
- Chocolate curls for garnish
Quick And Easy Chinese Dumpling Soup

In a 3-quart saucepan, heat the chicken stock, ginger root, scallions, shao hsing wine and dark soy sauce
- 4 cups chicken stock, homemade or low-sodium store bought (I like Swanson 99%)
- 1 slice fresh ginger root, 1/4-inch thick, peeled but left whole
- 2 scallions, sliced
- 1 Tbsp shao hsing wine (Chinese rice cooking wine)
- 2 Tbsp dark soy sauce
- Kosher salt and fresh black pepper, to taste
- 24 frozen Chinese dumplings with filling of your choice (do not defrost)
- Hoisin sauce for garnish (optional)
Melt In Your Mouth Chicken Breast

Mix mayonnaise, cheese and seasonings
- 4 boneless chicken breast halves
- 1 cup mayonnaise
- 1/2 cup freshly grated parmesan cheese
- 1 1/2 teaspoons seasoning salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon garlic powder
Thai Green Mango Salad

Place coconut in a frying pan or wok (no oil required)
- SALAD DRESSING:
- 2 firm unripe mangoes (mangoes may be green or red-orange in color)
- 1/4 cup dry shredded unsweetened coconut (the kind you use for baking)
- 2 cups bean sprouts
- 1/2 cup chopped fresh coriander
- 3-4 spring onions, sliced
- handful of peanuts or cashews, left whole or roughly chopped
- 1/3 cup fresh basil
- Optional: 1 cup cooked chicken or shrimp, or fried tofu if vegetarian/vegan (cut into small cubes)
- Optional: 1 fresh-cut red chili
- 3 Tbsp. fish sauce, OR 4 Tbsp.soy sauce if vegetarian/vegan
- 1/4 cup freshly-squeezed lime juice
- 2 Tbsp. brown sugar, or more to taste
- 1-2 tsp. Thai chili sauce, OR substitute 1/3 to 1/2 tsp. dried crushed chili (chili flakes)

Line an ungreased 9X13-inch baking pan with foil, leaving an extension of foil on either end
- 80 club crackers
- 1 cup butter
- 2 cups graham cracker crumbs
- 1 cup firmly packed dark brown sugar
- 1/2 cup milk
- 1/3 cup sugar
- 2/3 cup creamy peanut butter
- 1/2 cup semi-sweet chocolate morsels
- 1/2 cup butterscotch morsels
Cheesy Meat Loaf

Position a rack in the lower third of an oven and preheat to 350°F
- 4 Tbs. extra-virgin olive oil
- 2 carrots, cut into 1/4-inch dice
- 2 celery stalks, cut into 1/4-inch dice
- 1 onion, cut into 1/4-inch dice
- 1/2 oz. dried wild mushrooms, soaked in 1 cup hot water,
- chopped, soaking liquid reserved
- 3 garlic cloves, minced
- 2 1/4 cups fresh bread crumbs
- 1 Tbs. plus 1/4 cup minced fresh flat-leaf parsley
- 2 oz. mozzarella cheese, shredded, plus 6 oz., cut into 1/2-inch cubes
- Salt and freshly ground pepper, to taste
- 2 lb. ground beef (80% lean)
- 2 eggs, lightly beaten
- 1/2 tsp. minced fresh thyme
- Mashed potatoes for serving (see related recipe at left)
Magic S'more Crescent Puffs

Heat oven to 375°F. Unroll dough on work surface; press into 12x8-inch rectangle

Sausage, Potato and Cabbage Stew

In a large pot, cook the kielbasa and onion over medium heat until the onion is tender, about 10 minutes
- 2/3 pound kielbasa, sliced
- 1/2 red onion, chopped
- 2 tablespoons spicy brown mustard
- 1 1/2 tablespoons white wine vinegar
- 4 cups chicken broth
- 1 pound red potatoes, cut into 1/2-inch pieces
- 3 cups (about 7 ounces) store-bought coleslaw mix
- Salt and pepper
- 1/4 cup chopped flat-leaf parsley
- 4 slices sourdough bread, toasted
Easy Turtle Cheesecake Fudge
