Ingredients

  • 2 slices of sour dough or other bakery bread
  • 1 egg, cooked over medium (or to preferred temp) and seasoned with sea salt and pepper
  • 3 slices of roma tomato
  • 2 slices of "grown-up" cheese (havarati, swiss, provolone, pepper jack, etc.)
  • butter for the bread
  • 1/4 cup arugula or mixed greens

Preparation

Step 1

Butter one side of the bread and place it butter side down in a pan that has been heated to medium high heat. Lay one strip of cheese on the bread. Place the egg on the cheese. Top with the tomatoes, arugula (unless you prefer not to heat the greens then they can be carefully added after the sandwich is cooked), and another piece of cheese. Butter one side of the other slice of bread and place it butter side up on the sandwich. Let the sandwich cook a few minutes until the cheese starts to melt and the bread starts to brown. Then carefully flip the sandwich to the other side and cook for another few minutes until the cheese is melted and the bread has browned.

Place the sandwich on a plate, slice in half and serve.
