  • 2 T. coconut oil
  • 1/2 of a red onion sliced
  • 3 cloves garlic, minced
  • 1 red pepper, seeded and sliced
  • 1 green pepper, seeded and sliced
  • 1 yellow pepper, seeded and sliced
  • 1 orange pepper, seeded and sliced
  • salt and pepper to taste
  • 1 T. Bombay Veggie
  • 3 roma tomatoes, sliced
  • 1/4 c. low sodium chicken broth
  • 2 c. shredded chicken breast (you can use leftover)

  • 1/2 cup nut flour (hazelnut, almond, pecan, walnut)

  • 1 / cup almond milk
  • 1 cup gruyere cheese, optional (may need to cook longer if left out)
  • 1 t. salt
  • 1 t. pepper
  • 1 t. Veggie Bombay
