Chicken and Peppers

Super simple using leftover chicken
- 2 T. coconut oil
- 1/2 of a red onion sliced
- 3 cloves garlic, minced
- 1 red pepper, seeded and sliced
- 1 green pepper, seeded and sliced
- 1 yellow pepper, seeded and sliced
- 1 orange pepper, seeded and sliced
- salt and pepper to taste
- 1 T. Bombay Veggie
- 3 roma tomatoes, sliced
- 1/4 c. low sodium chicken broth
- 2 c. shredded chicken breast (you can use leftover)
Apricot Chai Spiced Rice

Place all ingredients exempt rice in a medium pot and bring to a boil
- 2 cups water
- 2 cups coconut milk
- 2 cups basmati or jasmine rice
- 2 cinnamon sticks
- 1/4 t. ground cardamom
- 2 T. fresh ginger, minced
- 1/4 cup chopped dried apricots
- Pinch of salt
- 1/4 t. course ground pepper
Apple, Blueberry, and Walnut Salad

Toss mixed greens with vinaigrette
- 3 cups mixed greens
- 2-3 T. balsamic vinaigrette (make it yourself with 3 parts olive oil, 1 part balsamic and a little salt and pepper)
- 1 red apple, cored and sliced
- 1/4 cup fresh blueberries
- 1/4 cup sliced grape tomatoes (red, yellow, or mix)
- 1/4 cup walnuts
- 2 T. goat cheese
French Onion Soup

In a large pot place the broth, bay leaves, thyme, sage and garlic powder
- 8-10 yellow onions, sliced in half and then sliced length wise (to make half rings)
- 1/4 c. butter
- 2 T. olive oil
- 1/4 c. sherry (or other red cooking wine)
- 4-5 cloves of garlic, fine minced
- salt and pepper to taste
- 4 32oz boxes of low sodium beef broth
- 3 bay leaves
- 3 T. thyme
- 2 T. sage
- 1 T. garlic powder
- 12 slices French bread, toasted (omit for Paleo)
- 12 slices provolone cheese (omit for Paleo)
Pumpkin Cheesecake

- Crust
- 2 1/2 cups gingersnap crumbs
- 1/4 cup melted butter
- Cheesecake
- 1 c sugar
- 16 oz cream cheese
- 1 c sour cream
- 1 15-ounce can pure pumpkin
- 3 large eggs
- 1 T. vanilla extract
- 1 T. Pumpkin Pie Spice
- pinch of salt
Blueberry Lemon Cheesecake

Heat oven to 375 F. Grease the bottom of a springform pan
- For the crust:
- 1/2 cup nut flour (hazelnut, almond, pecan, walnut)
- 1 /c cup unsweetened coconut
- 1 T. sugar
- 4 T. butter, melted
- For the cheesecake:
- 16 oz cream cheese
- 1 c. Stevia (or organic sugar)
- 1 cup Greek yogurt
- 4 eggs
- Juice and zest of one large lemon
- 1 t. almond extract
- 2 t. vanilla bean powder
- 1 cup fresh blueberries
- For the sauce:
- 1/4 cup fresh blueberries
- 2 T. water (or more to thin as desired)
- 2 T. Stevia (or organic sugar)
Zesty Italian Chicken

Season chicken breasts with paprika, salt and pepper and grill
- 4 chicken breasts, flattened
- 2 T. smoked paprika
- salt and pepper to taste
- 2 T. olive oil
- 3 cloves garlic minced
- 5 green onions chopped
- 4 fire roasted red peppers chopped
- 4 - 5 roasted, peeled and chopped green chilis (or one small can)
- 14 oz can stewed diced tomatoes
- juice of one lime
- 2 t. oregano
- salt and pepper to taste
- 2 cups fresh spinach
Artichoke & Sun Dried Tomato Quiche

For the crust, mix the flour, salt and oil
- Crust
- 1 cup almond flour
- 1/4 cup coconut oil
- pinch of sea salt
- 2 T. cold water
- Quiche
- 2 T. organic butter or coconut oil
- 1/4 red onion, sliced
- 1/2 red bell pepper, chopped
- 2 - 3 cloves garlic, minced
- 1/2 cup frozen artichoke hearts, thawed and chopped
- 2 green chilis, roasted, peeled, and chopped
- 1/8 cup sun dried tomatoes, chopped
- 7 eggs, beaten
- 1 cup coconut milk
- 1 / cup almond milk
- 1 cup gruyere cheese, optional (may need to cook longer if left out)
- 1 t. salt
- 1 t. pepper
- 1 t. Veggie Bombay
Sweet Pumpkin Gnocchi

Add the pumpkin puree, cheese, eggs, pumpkin pie spice, salt and pepper to cooled sweet potatoes and mix well
- 3 large sweet potatoes, peeled, boiled, pureed and cooled
- 1 c. pumpkin puree
- 1/2 c. finely grated Parmesan cheese
- 2 eggs
- 1 T. pumpkin pie spice
- 2 t. salt
- Freshly ground black pepper, to taste
- 3 to 3 1/2 c. flour
- Salted water, for cooking gnocchi
Bacon and Blue Cheese Brussel Sprouts

On medium heat the bacon drippings, onions, garlic, and brussel sprounts
- 10-12 brussel sprouts, end removed and halved
- 3 slices crispy cooked bacon, chopped (reserve drippings for cooking)
- 1/4 white onion, chopped
- 2 cloves garlic, minced
- 2 pinches of pepper
- 2 t. veggie bombay
- 4 T. blue cheese crumbles (optional)
