Ingredients

  • 1 whole chicken cleaned
  • 5.6 oz can coconut milk
  • juice and zest of one lime
  • 2 cloves garlic, minced
  • 2 t. onion powder
  • 2 t. basil
  • 2 t. oregano
  • 2 t. sea salt
  • 1 t. pepper
  • 1 t. tumeric
  • 1 lemon, cut in half
  • 1/4 yellow onion, rough chopped

Preparation

Step 1

Preheat oven to 375 F. Place the chicken in a roasting pan. Pour coconut milk over the chicken and massage it into the skin of the chicken. Mix all seasonings and rub into the chicken. Place the lemon and onion in the cavity of the chicken. Cover and bake for 2 hours or until internal temperature reaches 190 F.
