Ingredients

  • 4-5 lbs bonelss pork ribs
  • 14.5 oz can organic stewed tomatoes
  • 14 oz can coconut milk
  • 1/2 yellow onion, chopped
  • 1 large chopped carrot
  • 3-4 cloves of garlic, minced
  • 2 " piece of fresh ginger (minced)
  • 1 T. curry powder
  • 1 T. ground cumin
  • pinch of salt and pepper
  • 2 t. - 1 T. Frank's Red Hot (optional depending on desired heat) - chili flake can also be used

Preparation

Step 1

Place all ingredients in a crock pot and cook on low heat for 5-6 hours. Serve with veggies or rice depending on preference.
