Ingredients

  • 4

    pork chops, steaks, or fish

  • (Grill and season meat with salt, pepper, and green chili powder)

  • 2

    T. chili infused olive oil

  • ½

    red onion, sliced

  • 3

    cloves minced garlic

  • 1

    large green bell pepper sliced

  • 1

    large yellow bell pepper sliced

  • 1

    large red bell pepper sliced

  • 2

    small zucchinis sliced

  • Juice of a lemon

  • 1

    cup salsa (see my salsa recipe)

Directions

Saute onions and garlic in olive oil for about 1 minute. Add peppers and place a lid on the pan. Cook for about 5 minutes. Add zucchinis, lemon juice, and salsa. Recover and cook until all veggies begin to soften but are still have snap (about 8 minutes). Serve with prepared meat.
