Ingredients
- Marinade
- 3-4 lbs of chicken (any parts you like - skin on or off)
- 1 cup coconut milk
- 2 T. vinegar
- 1 T. paprika
- 1 T. garlic powder
- salt and pepper
- Coating
- 3 cups unsweetened coconut
- 2 T. paprika
- 2 T. garlic
- salt and pepper
- 4 eggs beaten
- 1 cup coconut oil

Preparation
Step 1
Mix marinade ingredients. Put chicken in a resealable bag. Pour in marinade and marinade in the refrigerator for several hours.
In a large pan, heat oil over high heat. Mix dry coating ingredients. Dip the chicken in eggs then in coating mix. Fry chicken on each side until browned and cooked through (roughly 10-12 minutes per side).
