Sour Cherry Chicken

  • 1 T. olive oil
  • 2 large chicken breasts, cubed
  • 2 large shallots, minced
  • 3 cloves garlic, minced
  • pinch of salt and pepper
  • 1/2 cup peanut butter
  • 1 cup sauerkraut
  • 1 cup frozen cherries
  • Juice and zest of large orange
  • 1 t. allspice
  • 1 t. vanilla



Step 1

In a large skillet, heat oil and cook shallots about 1 minute. Add chicken and garlic. Season with salt and pepper and cook until browned.

In the meantime, in a medium pot, mix saurkraut, orange juice and zest, cherries, allspice and vanilla. Stir and heat over medium heat until it comes to a boil.

When meat is cooked, add about 1/4 cup of the juice from the saurkraut mixture to the meat pan along with the peanut butter. Stir and cook just a bit longer to combine and melt the peanut butter (add a bit more juice if needed).

Plate the saurkraut mixture and top with the chicken. Add a cherry on top for garnish.
