- 1 lb ground beef
- 1 large onion, chopped
- 2 c salsa
- 1 15oz can black beans, drained, rinsed
- 1/4 cup zesty Italian dressing
- 2 tbsp taco seasoning mix
- 6 8in flour tortillas
- 1 c sour cream
- 2 c Mexican style four cheese
- cilantro (optional)

Salmon Burgers

- 2 tabl chopped fresh ginger
- 2 cloves garlic
- 1 tabl soy-sauce
- 2 tabl hoisin sauce, plus more to top the burgers if desired
- 2 tabl mayonnaise

- 1/4 tea salt
- 2 lbs wild salmon, cut into 1in pieces

Luscious Four-Layer Pumpkin Cake

Preheat oven to 350. Grease and flour 2 9 in round cake pans
- 1 pkg yellow cake mix
- 1 can pumpkin divided (15 oz)
- 1/2 c milk
- 1/3 c vegetable oil
- 4 large eggs
- 1 1/2 tsp pumpkin pie spice divided
- 1 pkg (8oz) cream cheese, softened
- 1 c powdered sugar
- 1 tub cool whip topping, thawed
- 1/4 c caramel topping
- 1/2 c pecans
Enchiladas

Mix meat, spices, 1 can chilies, & 1/2 c salsa
- 2 c salsa
- 4 c shredded chicken or turkey
- 2 c cooked sweet potato
- 2 cans (4oz) diced chiles

- 1-2 c jack/cheddar/pepper jack

Chunky Chocolate Jam Bars

Preheat oven to 350F. Mix flour, sugar, and baking powder in large bowl
- 1 1/2 c flour
- 1 c firmly packed light brown sugar
- 1 t baking powder
- 1 c (2 sticks) butter softened
- 1 1/2 c quick cooking oats
- 1/2 c coconut
- 1/2 c toasted pecans
- 5 squares semi-sweet baking chocolate, coarsely chopped
- 1 jar (12 oz) raspberry jam
