Gluten-Free Naan

Dissolve the yeast and sugar in the tepid soymilk and store in a warm place for 10 minutes or so
- 1 cup tepid unsweetened milk
- 1/2 cup brown rice flour (superfine)
- 1/2 cup white rice flour
- 1/2 cup sweet rice flour
- 3 tbsp chickpea (garbanzo bean) and/or fava bean flour (we didn’t have the required teff flour and this worked fine) - I used almond flour
- 1/2 cup tapioca flour
- 1/2 tsp salt
- 1 tsp gluten free baking powder
- 2 tsp sugar
- 2 tsp dried active yeast
- 2 tsp vegetable oil
- 1 cup soy creamer (or soymilk) with 2 tbsp apple cider vinegar and 2 tbsp cornstarch added as replacement for the yogurt [plain soy, coconut or rice yogurt would probably work fine too if you have one of them on hand (we didn't)]
- 1 tbsp ground flax seed combined with 3 tbsp water as replacement for the egg
- 1 tsp xanthan gum
- melted Earth Balance ™ for brushing atop naan prior to baking
- onion powder and more salt for sprinkling onto naan prior to baking
- optional fresh minced chives–either mix into dough or sprinkle atop each piece prior to baking (ideally both!)
Rustic Apple Galette

Don't sub. wax paper for parchment!
- Filling:
- Parchment Paper
- 3 apples, cored, peeled and thinly sliced (I used organic fuji)
- 1/3 cup organic cane sugar
- 1/4 teaspoon sea salt
- 1 tablespoon flour
- juice of half a lemon and zest
- 1 teaspoon pumpkin pie spice (1/4 tsp each of ground ginger, nutmeg, cinnamon, and cloves)
- 1 tablespoon fresh chopped rosemary
- 1/4 teaspoon black pepper
- Crust:
- 1 cup all-purpose, unbleached organic flour
- 1/4 cup whole wheat organic flour
- 1 tablespoon organic cane sugar
- 3/4 teaspoon sea salt
- 1 stick vegan butter stick, cold and cut into cubes
- 6 tablespoons ice cold water
- Glaze:
- 2 tablespoons non-dairy milk (I used So Delicious Coconut Milk Beverage)
- 1 tablespoon maple syrup
- coarse cane sugar
Molten Chocolate Cakes

HEAT oven to 425°F. BUTTER 4 small custard cups; place on baking sheet
- 4 squares BAKER'S Semi-Sweet Chocolate
- 1/2 cup butter
- 1 cup powdered sugar
- 2 whole eggs
- 2 egg yolks
- 6 Tbsp. flour
- 1/2 cup thawed COOL WHIP Whipped Topping
Roasted Winter Vegetables

The high temperature caramelizes the outside and leaves the inside tender and moist
- 1 lb carrots, peeled
- 1 lb parsnips, peeled
- 1 large sweet potato, peeled
- 1 small butternut squash (about 2 lbs), peeled and seeded
- 3 tabl good olive oil (olio santo)
- 1 1/2 tea kosher salt
- 1/2 tea freshly ground black pepper
- 2 tabl chopped fresh flat-leaf parsley
Rasgulla

Rasgulla and Rasmalai are milk based desserts prepared with freshly prepared chenna aka cottage cheese balls
- 1 lt milk
- 3 tbsps lemon juice
- 3 1/2 cups water
- 1 cup sugar
- pinch of cardamom pwd
Chicken Piccata

1. Place bread crumbs in a shallow bowl
- 1 c toasted bread crumbs
- salt and pepper
- 1 clove garlic (crushed)
- 1 lb chicken tenders - about 12 rinsed & patted dry
- 3 tabl vegetable oil
- 2 tabl butter
- 1/3 c low-sodium chicken broth
- 2 tabl fresh lemon juice
- 1/4 c chopped fresh parsley
- 1 tabl drained capers (optional)
