- 4 boneless, skinless chicken breasts (about 1 1/2 pounds), cut into 1-inch pieces

- 8 ounces white mushroom, sliced thin
- 1 red bell pepper, seeded and chopped fine
- 1/4 teaspoon pepper
- 3 tablespoons all-purpose flour
- 1/2 cup Madeira wine*
- An equal amount of brandy or dry Marsala can be substituted for the Madeira.
- 1 1/2 cups low-sodium chicken broth
- 2 tablespoons fresh parsley, finely chopped

1) Whisk together all of the dry ingredients in a medium-sized mixing bowl
- * 1 cup Round Table Unbleached Pastry flour or 7/8 cup King Arthur Unbleached All-Purpose Flour
- * 1/2 cup sugar
- * 1 teaspoon baking powder
- * 1/8 teaspoon nutmeg
- * 1/4 teaspoon salt
- * 1 teaspoon cinnamon
- * 3 tablespoons dried buttermilk powder
- * 2 large eggs
- * 3 tablespoons vegetable oil
- * 2 tablespoons water
- * Using pastry flour will make a more tender doughnut.
- * If you don't have buttermilk powder on hand, substitute 2 tablespoons buttermilk or yogurt for the water.

Curried Squash Soup

Heat a tablespoon of olive oil in a large, thick-bottomed stock pot on medium heat
- 1 2-lb butternut squash, peeled, seeded, diced into 1/2-inch to 3/4-inch cubes, yielding about 6 cups of cubed squash (see how to cut and peel a butternut squash)
- Olive oil
- 1 teaspoon butter
- Salt
- 1 large yellow onion, chopped
- 2 teaspoons yellow curry powder
- 1 teaspoon whole mustard seeds (if you substitute ground mustard, only use 1/4 teaspoon)
- A dash of ground cumin
- 1 Tbsp minced fresh ginger
- 4 cups chicken stock
- 1 teaspoon salt
- 1/2 cup sour cream (can substitute plain yogurt)
- 1/4 cup chopped fresh cilantro (can substitute parsley)
