Quinoa is a protein-rich seed, that is easy to prepare
- Garnish:
- 1 1/4 c water
- 1 c quinoa
- 1 tabl butter/margarine
- 1/2 c sweet potato puree
- 1 tabl pure maple syrup
- 1/3 c milk
- 1/4 tea cinnamon
- pinch of salt
- 1 tea of maple syrup per serving
- 1 tea chopped walnuts or almonds

- 1 1/2 quarts (6 cups) low-sodium chicken broth,
- homemade or store-bought
- 2 cups water
- 2 pounds whole chicken legs (about 3 thigh and
- drumstick sections), skinned
- 2 sprigs fresh thyme
- 2 sprigs fresh flat-leaf parsley
- 1 bay leaf
- 2 tablespoons extra-virgin olive oil
- 3 carrots, finely diced
- 3 stalks celery, finely diced
- 1 small onion, finely chopped
- 2 garlic cloves, thinly sliced
- 3/4 teaspoon kosher salt
- Freshly ground black pepper
- INGREDIENTS FOR THE DUMPLINGS
- 1 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons finely chopped fresh dill
- 1/4 teaspoon kosher salt
- Freshly ground black pepper
- 2 tablespoons butter, cut into 4 pieces
- 1/2 cup buttermilk
- 1 large egg, lightly beaten
Strawberry Pretzel Squares

Preheat oven to 350. Mix pretzels, 1/4 c sugar and the butter
- 2 c finely crushed pretzels
- 1/2 c sugar, divided
- 2/3 c butter, melted
- 12 oz (1 1/2 pkg) cream cheese, softened
- 2 tbsp milk
- 1 c whipped topping
- 2 c boiling water
- 1 pkg (8oz) strawberry flavored gelatin
- 1 1/2 c cold water
- 1 qt (4c) strawberries, sliced

1. Preheat the oven to 400F
- 4 slices nitrate-free bacon
- 3 large egg whites
- 1 large egg
- 1/2 c chopped, low-sodium chickpeas, rinsed and drained
- 1/4 c milk
- 4 tea grated Parmesan
Teriyaki Chicken

Make enough rice or quinoa to serve with your meal
- 2 tablespoons olive oil, plus more if needed
- 1 1/2 pounds boneless, skinless chicken breasts
- 4 carrots, chopped
- 2 1/2 cups broccoli, chopped
- 1 clove garlic, minced
- 1 medium onion, diced
- 1/4 cup water or gluten free chicken stock
- 1/2 cup gluten free soy sauce
- 1/3 cup packed brown sugar
- 1/2 cup water or gluten free chicken stock
- 2 tablespoons cornstarch
- salt and pepper, to taste (wasn't necessary when I made it)
