Coconut Sweet Potato Pie

This creamy dessert is full of beta carotene
- Crust:
- 1 cup rolled oats
- 1 cup walnuts
- 1/2 cup unsweetened shredded coconut
- 2 tablespoons coconut oil or butter
- water if necessary
- Filling:
- 3 cups mashed, cooked sweet potatoes (about 3 medium)
- 2 eggs, slightly beaten or Ener-G Egg Replace equivalent
- 1/3 cup coconut milk
- 3 tablespoons pure maple syrup or honey
- Topping:
- 1 tablespoon unsweetened, shredded coconut
Cheesy Stuffed Shells

HEAT oven to 400°F. Mix cottage cheese, spinach, 1/2 cup mozzarella, Parmesan and seasoning; spoon into shells
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
- 1 cup KRAFT 2% Milk Shredded Mozzarella Cheese, divided
- 1/4 cup KRAFT Grated Parmesan Cheese
- 1 tsp. Italian seasoning
- 20 jumbo pasta shells, cooked, drained
- 1 jar (26 oz.) spaghetti sauce
- 1 large tomato, chopped

Preheat oven to 350. Spray a 13x9 pan w/ nonstick bakig spray w/flour
- 2 c all-purpose flour
- 2 c sugar
- 1/2 tea salt
- 1/2 c butter
- 1/2 c vegetable oil
- 4 tabl unsweetened cocoa powder
- 1 c water
- 1/2 c whole buttermilk
- 1 tea baking soda
- 1 tea white vinegar
- 1 tea vanilla extract
- 2 large eggs
Holiday Sweet Potato Cake

1. Heat oven to 350F. Grease bottoms and sides of 2 round pans, 9 x 1 1/2 in, with shortening; lightly flour
- Cream Cheese Frosting:
- 2 c all-purpose flour
- 1 c sugar
- 1 t baking powder
- 1 t baking soda
- 3/4 t salt
- 1 1/2 t gr cinnamon
- 2 c shredded peeled sweet potato (1 large)
- 3/4 c vegetable oil
- 1 t vanilla
- 3 eggs
- 1 can (8oz) crushed pineapple in juice, undrained
- 3/4 c sweetened dried cranberries
- 1/2 c butter softened
- 1 package (8oz) cream cheese, softened
- 3 c powdered sugar
- 1 t vanilla
Rice n' Peach Salad

- 1 1/2 c cooked brown rice
- 1 can (11oz) whole kernel corn, drained or 1 1/2 c corn cut from the cob
- 1 c almonds, toasted, chopped
- 1 c fresh peas or frozen peas, thawed
- 1 peach, peeled, coarsely chopped
- 1/2 c Catalina dressing
- 1/4 c chopped red onion
- 1/4 c chopped cilantro or fresh parsley

- 8 slices thick-cut applewood-smoked bacon
- 2 tablespoons maple sugar or light brown sugar
- 1 tablespoon butter
- 1 tablespoon extra-virgin olive oil
- 1 small yellow onion, finely chopped
- 1 sprig fresh rosemary
- 1 bay leaf
- 4 garlic cloves, sliced
- 2 tablespoons tomato paste
- One 28-ounce can Italian plum tomatoes, drained and seeded
- 1 1/2 teaspoons kosher salt
- Freshly ground black pepper
- 1 ⁄2 teaspoon granulated sugar
- 11 ⁄4 cups low-sodium chicken broth, homemade (page 230) or store-bought
- 1 ⁄4 cup heavy cream

- 1 tea baking soda

- 1/2 tea kosher salt

- 3/4 c maple syrup
- 1/2 c carrot puree
- 1/4 c canola oil
- 2 tea pure vanilla extract
- 1/2 c raisins
Curried Chicken Salad

- 3 whole (6 split) chicken breasts, bone-in, skin-on
- Olive oil
- Kosher salt and freshly ground black pepper
- 1 1/2 cups good mayonnaise (recommended: Hellman's)
- 1/3 cup dry white wine
- 1/4 cup chutney (recommended: Major Grey's)
- 3 tablespoons curry powder
- 1 cup medium-diced celery (2 large stalks)
- 1/4 cup chopped scallions, white and green parts (2 scallions)
- 1/4 cup raisins
- 1 cup whole roasted, salted cashews
No Flour Peanut Butter Cookies
