Mashed Potato Layer Bake

Preheat oven to 375. Place white and sweet potatoes in separate bowls
- 4 large white potatoes, peeled, chopped and cooked
- 2 large sweet potatoes, peeled, chopped and cooked
- 1 8oz tub chive and onion cream cheese spread, divided
- 1/2 c sour cream, divided
- 1/4 t ea salt and pepper
- 1/4 c grated parmesan cheese
- 1/4 c shredded cheddar cheese
Saffron Risotto with Butternut Squash

- 1 butternut squash (2 pounds)
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 6 cups chicken stock, preferably homemade

- 1/2 cup minced shallots (2 large)

Creamy Fennel Slaw w Carrots and Apples

- 2 T rice vinegar

Cinnamon Applesauce Muffins

- 1/4 cup oil
- 1/2 cup molasses (for increased sweetness use half molasses and half honey)
- 1 cup applesauce
- 1 1/2 cups whole wheat flour
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/8 tsp. cloves
