Ingredients

  • 2 T oil
  • 1 minced onion
  • salt (to taste @ end)
  • 4 cloves minced garlic
  • 1 T grated ginger
  • 1 t garam masala
  • 3 c water
  • 1 1/4 c red lentils
  • 1 can coconut milk
  • 1/2 c minced fresh cilantro
  • 12 oz tomato seeded and chopped medium

Preparation

Step 1

Cook onion in oil. Add garlic, ginger and masala - cook for 15 sec. Stir in water, lentils and coconut milk. Bring to a boil. Reduce to simmer and cook 20 -30 min until it is a thick puree. Stir in cilantro, tomato and salt.
