Lady Marmalade Chicken Salad

Preheat oven to 425 degrees
- 2 boneless skinless chicken breast
- olive oil for drizzling
- Kosher salt and freshly ground pepper
- 3 Tbl. orange marmalade
- 1 medium shallot, minced
- 1 green apple, diced
- 1 cup red seedless grapes, halved
- juice of 1 lime
- 1 cup low-fat Greek yogurt, mixed well
- 1 Tbl. canola or peanut oil
- 1 tsp. brown mustard seeds or cumin seeds
- 1 clove garlic, minced
- 2 tsp. curry powder
- 2 Tbl. roasted salted cashews, chopped
- Fresh cilantro leaves, for sprinkling
Lime Italian Ice

Fill a large bowl with ice water
- 3 cups water
- 1 1/2 cup sugar
- 1/2 cup lime juice
Spinach & Feta Chicken Sausage Fettuccini

Cut chicken sausages on a diagonal 1/4 inch thick
- 1 pkg. (12 oz.) al fresco Spinach & Feta Chicken Sausage
- 1 jar (15 oz.) Classico Light Creamy Alfredo Pasta Sauce
- 8 oz. fettuccini pasta
- 2 Tbl. olive oil
- 1 clove garlic, peeled and minced
- 1/4 cup chopped white onion
- 1 Tbl. finely chopped rosemary
- 1/2 cup julienne sun-dried tomatoes
- 1/2 cup shredded Parmesan cheese
- 1/2 cup crumbled feta cheese
- Cooking spray
- 9 oz. fresh baby spinach leaves, rinsed

- 1 tsp. minced garlic
- 1/2 tsp. dijon mustard
- 1/2 cup finely diced celery stalks, plus 1/4 cup chopped celery leaves
- 1/3 cup finely chopped red onion
- 3 Tbl. chopped mixed fresh herbs (such as parsley and tarragon)
- 1/2 tsp. celery seeds
- 1/4 tsp. cayenne pepper

Crockpot Cashew Chicken

Note: I don't use ginger a lot so to buy fresh ginger for just a small amount isn't reasonable
- For the chicken:
- 2 lbs boneless, skinless chicken thigh
- 1/4 cup all purpose flour
- 1/2 tsp black pepper
- 1 Tbsp canola oil
- For the sauce: (this should be doubled if you want plenty to pour over rice)
- 1/4 cup soy sauce
- 2 Tbsp rice wine vinegar
- 2 Tbsp ketchup
- 1 Tbsp brown sugar
- 1 garlic clove, minced
- 1/2 tsp grated fresh ginger (see Note)
- 1/4 tsp red pepper flakes
- 1/2 cup cashews
