Add all ingredients and allow it to come to a boil
- 1 whole chicken, cut up
- 4-5 quarts water, boil first then add chicken (when it comes to a boil, skim off the fat)
- Add: 1 large onion
- 1 clove garlic, sliced
- 1 lb. carrots, chopped
- 4-5 stalks celery & leaves
- 3-4 allspice
- 1 bay leaf
- Salt and pepper to taste
Watermelon Lemonade Slushie

Place the watermelon in a single layer on a rimmed baking sheet, and freeze until completely frozen, like ice cubes...
- 2 lbs. cubed watermelon (about 4 cups)
- 1/2 cup sugar
- 1 large bunch basil, stems and leaves roughly chopped (about 2 cups)
- Juice of 3 lemons (about 1/2 cup)
Mini-Meatball Soup with Noodles

In a large bowl, mix together the beef, veal, breadcrumbs and 2 Tbl
- 1/4 lb. ground beef
- 1/4 lb. ground veal
- 1 cup breadcrumbs
- 1 egg, lightly beaten
- 1 Tbl. finely chopped flat leaf parsley
- 1 cup grated Parmesan
- Salt and pepper
- 1/3 cup vegetable oil
- 6 cups chicken broth
- 2 carrots, thinly sliced
- 8 oz. dried spaghetti, broken into 1 inch pieces
- 5 oz. baby spinach leaves
Cucumber Salsa***

In a small bowl, combine the first seven ingredients
- 2 cups finely chopped seeded peeled cucumber
- 1/2 cup finely chopped seeded tomato
- 1/4 cup chopped red onion
- 2 Tbl. minced fresh parsley
- 1 jalapeno pepper, seeded and chopped
- 4 1/2 tsp. minced fresh cilantro
- 1 garlic clove, minced
- 1/4 cup reduced fat sour cream
- 1 1/2 tsp. lemon juice
- 1 1/2 tsp. lime juice
- 1/4 tsp. ground cumin
- 1/4 tsp. seasoned salt
- Tortilla chips
Susage-Cheese Balls

Heat oven to 350 degrees. Lightly grease bottom and sides of jelly roll pan 15 X 10
- 3 cups Bisquick mix
- 1 lb. bulk pork sausage
- 4 cups shredded cheddar cheese (16 oz.)
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1/2 tsp. dried rosemary leaves, crushed
- 1 1/2 tsp. chopped fresh parsley or 1/2 tsp. parsley flakes
- Barbecue sauce or chili sauce, if desired
Chocolate Peanut Butter Rice Krispies

Lightly grease a 9X13 pan and set aside
- 3 TBL. butter
- 1 bag large marshmallows (10 ounces)
- 1/2 cup peanut butter, plus 1 1/2 TBL, divided
- 6 cups rice krispies
- 1 1 2/ cups chocolate chips
- 1 1/2 TBL. peanut butter

- 4 slices white bread, toasted
- 3/4 cup prepared pesto, divided
- 8 oz. cherry tomatoes, sliced
- 1 pkg. (8 oz.) fresh mozzarella cheese, sliced
- 1 cup sliced arugula
Pulled Pork Sliders

- For the Pork:
- 1 - 3 lb. Boston butt pork roast
- 1 1/2 Tbl. pimenton (smoked Spanish paprika)
- 1 Tbl. garlic powder
- 1 tsp. cayenne pepper
- 1 1/2 tsp. packed brown sugar
- 1 1/2 tsp. celery salt
- 1 1/2 tsp. mustard powder
- Kosher salt
- 1 - 12 oz. bottle beer
- 16 slider rolls, split and toasted
- Coleslaw, for topping
- For the Sauce:
- 1 1/2 cups apple cider vinegar
- 1 clove garlic, smashed
- 2 Tbl. packed brown sugar
- 2 Tbl. tomato paste
- 1 Tbl. dijon mustard

Carne Asada Tacos with Carrot-Pepper Slaw

- 1/2 cup nonfat plain Greek yogurt
- 1 clove garlic, finely grated
- 2 Tbl. chopped fresh cilantro, plus leaves for topping
- 1 large white onion, cut into rings
- 1 Tbl. extra virgin olive oil, plus more for brushing
- Kosher salt
- 1 lb. sirloin steak
- 4 medium carrots, shredded
- 1 large red bell pepper, cored, seeded and grated
- 3 Tbl. fresh lime juice, plus lime wedges for serving
- 12 corn tortillas
Marinated Grilled Flank Steak

- 1 1/2 cup soy sauce
- 1/3 cup sugar
- 1/3 cup sweet rice wine vinegar
- 1/4 cup chopped onion
- 1/4 cup chopped green onion
- 1/2 cup peeled, chopped Asian pear or regular pear
- 1 1/2 Tbl. sesame oil
- 1 1/2 Tbl. grated orange zest
- 2 1/2 Tbl. chopped fresh ginger
- 8 cloves garlix
- 2 lbs. flank steak cut into 4 (8 oz.) pieces
- Canola or vegetable oil
